00:22 craft distillery where everything is produced from absolute scratch. Do you want to explain
00:27 a bit about that? We produce everything from scratch by hand on very small equipment which
00:33 is entirely heated by wood. It is a laborious process but the product is good. I mean every
00:40 working day begins like a middle class round boy montage with our chopping blocks in the cold.
00:45 Wow, yeah so but nothing about the Iron Man speaks rum to me, it doesn't shout it at me,
00:52 so what makes it uniquely Manx here on the run? So I mean all the water we use is from the Lentrench,
00:57 we don't use anybody else's alcohol, all of the fermentation is done in Andrus on Ballaculli Farm
01:03 by me. I'm not from the island but I love living here so I don't think we can lay claim to the
01:11 heritage that other businesses here might but I think we try and do service to the experience
01:18 that we have here and certainly we think we're trying to do as much as we can to get the Iron
