00:28 To be honest, there's nothing really unique about our recipes.
00:31 They're common recipes that you can find anywhere on the internet.
00:36 But what makes us special is we make everything from scratch, including the noodles.
00:41 [Music]
00:47 We don't use shortcuts, so it takes us like two to three days to prepare a batch for the weekend.

01:06 Me and my entire family, we love Japanese food and culture.
01:10 My sister actually works and lives in Japan, so we visit her quite often.
01:15 Well, as often as we can.
01:17 And whenever we visit, it's like the first day I ask everyone, "Let's go have ramen! Let's go have ramen!"
01:22 And they go with me. And then second day, "Let's go have ramen! Let's go have ramen!"
01:25 By the third day, I'm the only one looking for a ramen shop.
01:30 So during the pandemic, since all of us were in hard lockdown,
01:34 I started to look on YouTube for recipes how to make ramen.
01:39 And I saw this video.
01:40 "15-minute tantanmen just tastes just like the real thing."
01:44 It did not taste like the real thing.
01:46 So since I had so much time, I started researching.
01:51 In the beginning, the first thing I learned how to make was proper ramen eggs.
01:58 And then I moved on to the seasoning and then the stock.
02:03 And then during that time, I was still buying noodles from a noodle supplier.
02:08 And then I got to talk to the owner, Jin Chiba, of Ramen Pro Shop.
02:13 And then I started asking tips.
02:15 And since everyone was in lockdown, I saw some ramen chefs on Instagram and YouTube.
02:22 And I would message them and I would ask them tips.
02:24 And they would share their knowledge.
02:27 It was really fun.
02:30 And it's the nerdiest food in the world.
02:32 So it suits my personality.
