Kolhapuri Chicken Sukka | How to Make Kolhapuri Chicken Sukka | Chicken Recipe By Prateek Dhawan

Kolhapuri Chicken Sukka is a dry chicken dish from Kolhapuri cuisine. It is made with chicken, coconut and aromatic spices. Serve this Kolhapuri Chicken Sukka with roti or rice and dal as a side dish.

Ingredients:
250 Gms Chicken
1 Tsp Ginger Garlic Paste
1 Tsp Lemon Juice
Salt (As per taste)
1/2 Tsp Black Pepper Powder
1/2 Cup Coconut (Grated)
2 Tbsp Oil
1 Onion (Sliced)
1 Tbsp Poppy Seeds
2 Tbsp Oil
2 Bay Leaves
1 Onion (Chopped)
1 Tomato (Chopped)
Salt (As per taste)
1 Tsp Red Chili Paste
2 Tsp Kolhapuri Masala Powder
1/4 Cup Water
1 Tbsp Coconut (Roasted)
1 Tbsp Ghee
1/2 Black Pepper Powder
1 Tbsp Coriander Leaves (Chopped)

00:00 Hi guys, this is your Punjabi chef Prateek Dhawan. Not just any Dhawan, today I am Dhawan.
00:07 And today we are going to make Kolhapuri style Chicken Sukka. So let's start cooking.
00:14 To begin the recipe, first we'll marinate the chicken. For that, first I'm going to
00:22 add ginger-garlic paste, lemon juice, salt, and salt.
00:30 And black pepper powder. Now mix this all together.
00:37 Now the chicken is properly marinated. I'm going to set it aside for a while.
00:44 By that time, we'll make the Kolhapuri masala. I'm going to dry roast the coconut till it gets golden brown in colour.
00:56 Coconut is golden in colour now. I'm going to transfer it into a bowl.
00:59 In the same pan, again I'm going to add oil and saute onion and poppy seeds.
01:04 Once the oil is hot, I'm going to add onion. Saute it for a while.
01:12 As the colour of the onion starts to change, I'm going to add poppy seeds.
01:18 And cook it for at least 1 minute.
01:22 Onion and poppy seeds are done. I'm going to transfer them into a jar.
01:29 To that, also I'm going to add desiccated coconut and turmeric and then grind it into a fine paste.
01:34 After making the Sukka Masala, let's start with the dish. For that, first I'm going to switch on the gas.
01:40 To the pan, I'm going to add 2 tbsp of oil.
01:44 Oil is hot. First, I'm going to add 2 bay leaves.
01:51 After that, I'm going to add chopped onion.
01:53 Saute till golden brown.
01:57 As the onion starts to get golden brown, I'm going to add chopped tomatoes.
02:04 Little salt to speed up the process.
02:08 We're going to saute the tomatoes till they get nicely soft and mushy.
02:19 As the colour of the tomatoes starts to change, it's time to add the chicken.
02:21 We're going to cook the chicken till the colour of the chicken turns from pink to white.
02:35 The colour of the chicken has changed. It's time to add the masala.
02:39 First, I'm going to add the grounded paste which we made earlier.
02:42 To that, I'm going to add red chilli paste.
02:45 2 tsp Kola Puri Masala.
02:49 Now, saute the chicken with the masala for at least 2 minutes.
02:51 After cooking the chicken for 2 minutes, I'm going to add little water.
03:01 Give it a nice stir. Mix the masala nicely.
03:10 And then cover it with a lid and cook it for at least 5 minutes.
03:17 Our Kola Puri Sukka is ready. Let's open the lid.
03:19 To this, I'm going to add roasted coconut which we made earlier.
03:27 With that, I'm going to add little ghee for flavour.

03:34 And last, little bit of fresh coriander.
