Introduction

Sautéing the Chicken
2 tbsp Oil
3 Bay Leaves
4 Green Cardamom Pods
10-12 Cloves
2 Black Cardamom Pods
2-inch Cinnamon Sticks
1 tbsp Cumin Seeds
2 tbsp Ginger-Garlic (chopped)
2 Onions (chopped)
200 gms Chicken Breast (cut into cubes)
1 tsp Turmeric Powder
Salt (as required)
1/2 cup Tomato Purée
4-5 Green Chillies (sliced)
1 tbsp Coriander Seed Powder
1 tbsp Kashmiri Red Chilli Powder
1 tbsp Black Pepper-Cumin Powder
1/4 cup Zucchini (chopped)
1/2 cup Carrot (chopped)
1/2 cup Bell Peppers (yellow, green & red)
1/4 Broccoli (blanched)
1 tbsp Coriander Leaves (chopped)
Mint Leaves

Cooking the Rice
2 Star Anise
Saffron Strands
1 tsp Turmeric Powder
Salt (as required)
Rose Water
250 gms Basmati Rice (soaked)
Brown Onions
