00:00 All around the world, happy hour starts at 5pm, but here at Esquire it starts at 4.59pm,
00:05 which means I've only got one minute to make you a cocktail.
00:08 Hi there, I'm Sam Hewan, I'm here in New York at Jack's on Bond, and I'm going to make you a gin fizz.
00:14 Do I remember the first time I had a gin fizz? I do, and in fact I was in New Orleans and I had
00:24 a Ramos gin fizz, which takes a lot of shaking and a lot of different ingredients. We're going
00:28 to make a simplified version of it. It is a delicious, very refreshing summer drink.
00:33 Scots love to drink obviously, and whisky is synonymous with Scotland, but also gin is having
00:38 a real revival, very popular. Scots like to drink anything, pretty much anything that's in a glass.
00:46 Okay, first of all, two ounces of Sassanach Wild Scottish Gin, an ounce of lemon juice,
00:54 three quarters of an ounce of simple syrup, and then the egg. I like to do something that my good
01:00 friend Jamie Oliver taught me. You crack it into your hand, the egg white slips through your fingers
01:06 hopefully, and... ta-da! Don't ask me to do that again. We're going to dry shake.
01:13 Sounds pretty dry to me. We're there. Big cube of ice.
01:22 That'll do. We're going to shake again. Yes.
01:28 That feels pretty cold to me. Iced Collins glass. Look at the bubbles, deliciousness,
01:36 and then we're going to top up with some fresh soda water. There you go, your Sassanach gin fizz.
01:44 Cheers.
