In this video, learn how to make honey roasted beets with both golden and red beets. This recipe starts by preheating both the oven and the sheet pan. Next, after peeling and cutting the golden and red beets into wedges, toss them separately in an avocado oil, salt, and pepper mixture. Place the beets onto the heated pan and bake for around 25 minutes before drizzling them in honey and lemon juice and baking for 5 more minutes. They’re sweet, tangy, tender, and make for a great side or snack.

00:00 Most people aren't the biggest fans of beets but if you roast them with some honey and citrus,
00:04 they become sweet, tangy, tender, and beautifully caramelized.
00:08 The first thing you want to do is preheat your oven to 425 degrees.
00:12 Then you're going to take your sheet pan and put it in the oven so it can get hot in advance.
00:16 Next, let's peel the beets and cut them in half. Then cut them into small wedges.
00:20 To a large mixing bowl, add avocado oil, salt, and pepper.
00:24 Add your golden beets and toss well to coat.
00:26 Then in a separate bowl, add the same avocado oil, salt, pepper, and red beets.
00:30 Toss them together, making sure they are fully coated.
00:33 Then transfer your red beets and gold beets to the sheet pan.
00:36 This will make sure that the beets cook quicker and they have a nice sear.
00:39 You're going to roast these in a 425 degree oven for about 20 to 25 minutes.
00:43 Then you're going to remove them from the oven and drizzle on some fresh honey and fresh lemon juice.
