BAYTE is situated in Kings Road, St Leonards, where Kings Road Antiques used to be. BAYTE will be using fresh, local produce and will also be opening a cafe, as well as lunch and dinner service.

00:00 We are Bait and our restaurant is Farm to Table.
00:08 We're very passionate about getting local produce from good farmers.
00:12 Our chef himself, he has a little small holdings farm,
00:16 so we're going to be getting all the vegetables from him.
00:19 And we've got an open fire grill, so we want to get the best produce of meat and fish to have on the fire.
00:27 We've got a bit of an Italian influence because I'm Italian, good pastas,
00:30 but I'd say it's a bit more modern European.
00:33 Our chef's very creative and he's worked with lots of different cuisines,
00:36 so I think they'll all come together to create these delicious flavours.
00:39 I mean, there's lots of vegetarian. I actually don't eat meat myself,
00:43 and we will have lots of vegetarian and vegan options.
00:46 It's really important to me that the mains of vegetarian and vegans don't just feel like a vegetable,
00:52 but they have, you know, substance to them.
00:55 The restaurant's from Thursday night till Sunday,
00:58 so we do dinner and lunch service from Thursday night to Sunday,
01:03 and then we're opening a cafe, but we haven't opened it,
01:06 which is going to be a little bit more chilled.
01:08 We're going to be cooking ourselves in the cafe, and that's from Monday to Thursday daytime.
01:13 Sylvie, my business partner, and I designed the kitchen with not much kitchen experience,
01:18 so that was quite fun.
01:21 But yeah, it was good. We got a grant, which really helped us get the kitchen installation,
01:26 wood fire grill and a good oven, so that was really good.
01:30 It was very different. Before, I had a false ceiling and it didn't have the atrium,
01:38 which we're really proud to have brought back because it was all covered up.
01:42 It was quite a lot of work because the building hadn't been touched for so long,
01:47 so we came up with a lot of obstacles, which were at times very challenging,
01:52 but we got through them.
01:54 And it's been really nice to kind of bring the building back to its former glory,
01:57 to have the high ceilings, to put a few antiques in it to keep back to its homage.
02:01 And yeah, it's been a journey, but we've got them.
02:06 I'm really happy with how it's come out.
