New Carribean takeaway opens in Fareham.

00:00 My name is Kia and I'm on 200 West Street Fairham and we're a caravaner.
00:04 We're a new company, a Caribbean cuisine company.
00:08 And we're basically trying to introduce the community to Caribbean food.
00:15 Excellent. So it is almost like quite a new cuisine into the area.
00:20 Why did you open it and tell us a little bit about the things on the menu.
00:27 So I've been open up for three weeks now and I've done my professional cooking course and stuff like that.
00:36 And I've always wanted to open up things.
00:39 Say five years ago this was like a dream of mine to open up a more of a pub, Caribbean getaway kind of restaurant.
00:46 But I guess this is a start, Caribbean takeaway so we have to start small.
00:51 A lot of my food is fresh food, food from the earth like cassava, plantain, purple yam, different pumpkins, fresh food, anything that's grown basically.
01:05 I want to develop a vegan side as well whereby mainly all these things are done fresh.
01:12 But in order to incorporate the Caribbean cuisine with it I had to do a bit of jerk chicken because everybody just likes jerk chicken.
01:18 Everybody likes the curry goat so I had to do that bit as well because I'm from the Caribbean and I like meat as well.
01:24 But I want to get a lot of vegetarian and vegan dishes going up because Caribbean food is all about natural food, food from the earth, kind of vastafarian kind of food that we cook at Caravan.
01:40 Okay, that sounds really good. So what was your background before all this? Were you always into...?
01:49 So my husband was in the military and we travelled a lot with the military.
01:55 We went to Germany and then he left the military and we came out.
02:00 I was mainly a stay-at-home mum and then I think about, I'd say three years ago I decided to do my professional cooking course because I said this is what I wanted to do.
02:10 And I wanted to know the best way to cook the food to bring it across to customers as well so that they could experience good cooking and not just home cooking.
02:21 And that's why the logo of my food is 'Experience the Joy of Food' because even though my menu is set I will be bringing different food throughout the seasons, like bringing Caribbean food, meat, British food kind of selections coming through sometimes.
