00:00 Hi everyone, welcome back to My Cupcake Addiction.
00:08 Today I'm super excited to be showing you how to make this gorgeous rainbow layer My
00:13 Little Pony cake.
00:14 It's rainbow on the inside, it's rainbow on the outside, and it's My Little Pony all over.
00:18 I had a ton of requests for something My Little Pony.

00:28 Let's get started.
00:29 The things that you'll need for today's tutorial, I've got an offset spatula, I've got a serrated
00:33 knife or a bread knife, I've got an assortment of food colorings and I've got red, yellow,
00:37 green, orange, blue, and purple.
00:40 I've got a batch of our buttercream frosting which I've divided into 6 bowls.
00:43 I will link to that recipe in the description box below.
00:45 A pastry brush.
00:46 This is a bit of a simple sugar syrup so I just use like 2 tablespoons of apricot jam
00:50 with 3 tablespoons of water and just microwave it.
00:54 I've got my 2 little My Little Pony figurines so I went with Rainbow Dash and Rarity but
00:58 of course you can use your favorite My Little Pony characters.
01:00 I've got a little printable rainbow template.
01:02 I'll leave a link to that one in the description box below.
01:04 And this one's perfect for a 6 inch cake.
01:06 I've also got my baked rainbow layers of cake so I'll be showing you how to bake these but
01:11 you'll need a double batch of either a packet cake mix or enough of your favorite vanilla
01:15 or white cake mix to make the equivalent of 2 6 inch round cakes.
01:19 I've also got a 6 inch cake tin and some baking paper or grease-proof paper.
01:24 I've got 2 bamboo skewers, some sticky tape, some spoons.
01:28 I'm using a loyal number 15 open round pastry tip or piping tip and a disposable piping
01:33 bag.
01:34 I've got a 10 inch wooden cake board which I'm just resting on a cake decorating turntable
01:38 for ease of today's tutorial.
01:40 I've got some Jaffas.
01:41 You can also use Whoppers, Maltesers, just any kind of a round candy.
01:45 Some cornflour, some white fondant and a fondant rolling pin.
01:49 First of all, you want to make up your vanilla mix so I'm just going to use a packet mix
01:52 today but you can use your favorite vanilla cake mix or you can use the vanilla cake mix
01:56 out of my Cupcake Addiction Recipe eBook which I will link to in the description box below.
02:00 You want to mix that up and once it's all mixed, you want to divide your batter evenly.
02:03 I'm just making 5 layers today because I'm not going to do a blue layer of cake.
02:08 I'm going to make some red.
02:09 I'm just adding a generous amount of color to each of my bowls.
02:12 So I've got red, yellow, green, purple and orange.
02:15 And I'm mixing that color all the way through so I can't see any white batter particularly
02:19 in the bottom corners of the bowls.
02:21 You want to completely line your cake tin with your grease-proof or baking paper and
02:25 then we're just going to scoop in...
02:26 I'm going to start with that purple or whatever your base color is going to be.
02:30 And use your spoon just to level it out in the bottom of that container.
02:33 I always put a circle of the grease-proof paper in the bottom and then a collar of the
02:37 grease-proof paper doubled over around the outside.
02:40 You want to repeat this process for each of your layers.
02:43 They're going to take about 15 to 20 minutes per layer.
02:46 They're only thin but they are still 6 inches so you want to make sure that they're cooked
02:48 all the way through and you'll know they're done when they spring back in the middle.
02:51 So you can see I'm really just repeating the process with each of our different colors
02:55 until they're all made.
02:56 Let those completely cool and while they're cooling, we can color up our buttercream frosting.
03:00 You do want a generous amount of color in both the batters and the frostings because
03:04 this is a rainbow cake and you want those colors to pop.
03:06 If you're using liquid colors, you'll always need a little bit more of that than your color
03:10 pastes because the color pastes are a bit more concentrated so you don't need as much.
03:14 Mixing all of that color through, once again, making sure that we're not getting any white
03:18 left in our buttercream frosting.
03:20 And then you want to take your cooled, cooked layers and we're just going to carve the tops
03:24 off them.
03:25 So you can see they're all a bit brown on top but once you carve away that kind of just
03:28 cooked edge, you've got a really nice, bright, vibrant color.
03:32 You want to repeat that and you can actually use these leftover offcuts for some of our
03:36 rainbow cake pops.
03:37 I will leave those in the description box below but they're a great pairing for this
03:40 cake and they're also a great way to use up any leftovers.
03:43 With all of your cake layers cooked, cooled and carved, it's time to start stacking.
03:46 Throw a little bit of that purple frosting straight down on the cake board.
03:49 See if it's something for your bottom layer to stick to.
03:51 And then down goes the cake.
03:53 Now I'm going to syrup my cake.
03:54 If you're going to serve this the same day or the morning after you're making it, there's
03:58 no need to syrup.
03:59 But the syrup will just help it retain its moisture and stop it from drying out.
04:03 Now using my offset spatula, I'm just applying a thin coat of that purple frosting.
04:08 The difference between this rainbow layer cake and other rainbow layer cakes is a lot
04:11 of them break up the different colors in the rainbow with white frosting.
04:14 But I've opted to take that rainbow coloring all the way through because we've got to color
04:18 that frosting to go around the outside edges anyway.
04:21 On goes your next layer which for me is going to be green and another coat of syrup before
04:26 applying another just a thin coat of that buttercream frosting.
04:30 I will mention with these cakes, it is best if you can get all of your layers about the
04:34 same height because it gives them that really uniform look when you cut into them.
04:38 We're only going to syrup that top layer.
04:40 We're not going to put any frosting on.
04:41 And then I'm going to take my purple just on the tip of my offset spatula because I
04:45 really only want purple along the bottom inch or so of that cake.
04:48 And I'm just going around the outside.
04:51 Taking your green now, you want to kind of do it just in a line above that purple so
04:55 you can see what we're doing.
04:56 Then we're doing some orange.
04:57 Red is going to go on top.
04:59 Now these side colors don't have to be perfect.
05:01 They're really just to give you a bit of a crumb coat or a bit of a base coat.
05:05 But we don't want them to be all the same color because we want them to look rainbow
05:08 when the cake's cut into.
05:10 So now I'm just using my offset spatula.
05:11 I'm going to scrape back the sides.
05:13 And don't worry if your colors blend into each other a little bit.
05:16 But you want to try and get the sides as flat as you can.
05:19 And then spend a little bit of time just trying to give yourself a relatively sharp edge on
05:24 the top.
05:25 Pop that cake off into the freezer for about 20 minutes and let that first coat of buttercream
05:29 frosting completely set so that you've got a really nice firm base to start working on.
05:34 And then you want to fill that disposable piping bag with your first color which for
05:36 me is going to be purple paired up with that loyal number 15 open round tip.
05:40 So I'm going to tilt the cake a little bit.
05:43 And you can see here what I'm doing is I'm squeezing out just a small blob of icing and
05:48 then I'm actually using the ridge of the tip to flatten that frosting off which gives us
05:53 this really nice petal effect.
05:55 Make sure that with each of your colors, you're starting at the same point and finishing at
05:58 the same point on the back because you're going to have a slightly uneven edge where
06:01 those petals start and finish.
06:03 So moving on to the green and you'll see I'm starting exactly where I started with the
06:06 purple and I'm just overlaying a blob and then smoothing it down.
06:11 Going on to the yellow now, once again starting at that join at the back.
06:14 And then moving on to the orange.
06:16 You do want to be careful here that you've got enough space for all 5 of your colors
06:21 going up the cake.
06:23 So my red is finishing really really nice and flush with the top.
06:25 You've got a little bit of leeway.
06:27 Now blue, we didn't do a blue cake layer because I want this to look like the sky and the clouds
06:32 for our My Little Pony cake.
06:33 So instead of going around the edges, we're going around the top and you'll see that I'm
06:37 actually going kind of in on an angle as I'm squeezing and flattening those little blobs
06:42 and making almost like a petal flower effect on the top of the cake.
06:46 Still coming in in our little layers but there's going to be quite a bit more blue frosting
06:49 than any of your other colors.
06:51 When you get to the center, you just want to squeeze in 3 or 4 little petals to kind
06:55 of finish it off like a little center bud of a flower in there.
06:59 That's your basic rainbow layer cake.
07:01 Now to turn this into a My Little Pony rainbow layer cake, you just want to take your 2 skewers
07:05 and your printable rainbow template with a little bit of sticky tape.
07:09 Sticky tape those 2 skewers on and you've got your little support structure for your
07:14 rainbow.
07:15 Tilt them in a little bit just so that they fit nicely into the cake and then you just
07:18 want to position them into the cake.
07:20 But make sure the base of that rainbow is not actually touching the frosting or else
07:23 the frosting is going to get absorbed up into it and it's actually going to start to discolor
07:27 your rainbow.
07:28 Put a little bit of cornflour down now and you want to roll out some of that white fondant
07:32 and cut out a couple of kind of haphazard rectangle shapes, no exact shape or size here.
07:38 I'm going to take a little bit more of that syrup or you can also use just plain water
07:41 here and just give them a nice coating.
07:44 And then I'm going to put in my little candy balls.
07:47 You could also use little balls of fondant here but no one wants to eat that big chunk
07:49 of fondant.
07:50 And I personally would love to have sugar-coated Jaffas or sugar-coated Whoppers.
07:55 Fold that over so that you're trapping those candy balls inside and that's going to give
07:59 you like the puppy shape of the cloud.
08:01 And you can see I'm using my fingers to really make sure that I'm neatening down the edges
08:05 and joining them together.
08:07 That syrup or that water is going to act like a glue.
08:10 Use your knife and trim around the edges.
08:11 You don't have to get too close here because then you can just use your fingers to kind
08:14 of like push in the edges, making a little cloud shape.
08:17 You want to bear in mind you want these 2 clouds to be the opposite of each other so
08:21 one comes out one side of the rainbow and the other one goes out the other side of the
08:25 rainbow.
08:26 Repeat that process for your second cloud, positioning those little balls inside.
08:30 And on goes your second cloud underneath your rainbow.
08:35 Now it's as simple as taking your 2 little My Little Pony figurines and positioning them.
08:39 This is a gorgeous rainbow cake without the My Little Pony but with the My Little Pony,
08:43 it's perfect for so many My Little Pony fans.
08:47 So I'm going to put rainbow dash straight on top of the cake just into that buttercream
08:50 frosting.
08:51 For rarity, I'm going to give her a little bit of frosting on each of her hooves just
08:55 to stick her in place.
08:57 And I'm going to position her down on the cake board.
08:59 That completes your My Little Pony Rainbow Layer Cake.
