00:13 Today we are going to see how to prepare vegetable pulao with white rice
00:17 Now normally when we make vegetable pulao we usually cook vegetables along with rice
00:24 By doing that way the rice gets kind of little pale white color and also vegetables lose its natural color
00:32 and they get kind of mushy and soggy
00:35 Now to avoid all these things today I am going to show you the easy way of making this vegetable pulao
00:41 So let's start with the recipe
00:44 So to prepare this vegetable pulao I start with the rice
00:48 and here I have a cup of long grain basmati rice
00:52 and the rice needs to be washed 3-4 times and then soaked in enough water for 20-30 minutes
01:00 and after 30 minutes you need to drain off all excess water from this rice
01:04 and take this rice into pan
01:10 In the rice add 2 cups of water
01:16 also add in some salt for taste
01:21 and give it a stir
01:26 Next turn the heat on over high heat and bring this rice to boil
01:32 and after this rice comes to a boil next I am going to lower down the heat to medium
01:37 and in this I am going to add 2 tsp of milk
01:42 I am sorry it's a ghee
01:45 This ghee helps to keep each grain separate
01:49 and next I will add in some whole garam masala
01:52 some bay leaf, cinnamon stick, black cardamom, few cloves and black peppercorns
02:03 give that a stir
02:11 put the lid on and cook this for just another 2-3 minutes
02:18 and after about 3-4 minutes when you see this rice grains has absorbed most of the water
02:24 you got to lower down the heat to the lowest possible temperature
02:29 and you want to continue to cook this rice over very low heat for next 20 minutes
02:35 and while this rice is getting done we will make our vegetables ready
02:39 and for that you need to heat up just a tsp of oil into separate pan
02:44 and the oil looks enough hot, next in this I am going to add some cumin seeds
02:51 and let them sizzle up
02:54 after cumin seeds are done next I am going to add 1 green cardamom
03:00 1 clove and 1 black peppercorn
03:06 in here goes some thinly sliced ginger and some green chilli
03:14 and give that a stir
03:17 and next in here goes some chopped carrot
03:22 mix
03:28 and stir this around for just about a minute
03:31 and after sautéing carrots for about a minute
03:33 next in here goes some green beans
03:39 also goes in some corn
03:43 and I am using this frozen corn
03:47 add in some frozen peas
03:52 mix that in
03:54 and then sprinkle over just a pinch of salt
03:58 just for taste
04:01 mix that in
04:03 and here I have cooked these veggies for few more minutes
04:07 and they look nice and tender
04:09 now turn the heat off
04:11 and sauté all these vegetables over medium high heat for about 3-4 minutes
04:16 well these vegetables are done and also here this rice is cooked for 20 minutes
04:22 now I am going to turn the heat off
04:24 and let's check this rice
04:27 take the lid out
04:31 yum
04:32 the rice is completely cooked
04:34 now in here I am going to add these sautéed vegetables
04:41 give this rice and vegetables a gentle mix
04:47 looks super
04:49 again put the lid back
04:53 and cook this rice over very low heat for 5 more minutes
04:57 and here this vegetable pulao is been cooked over very low heat for 5 more minutes
05:03 now let's turn the heat off and check this out
05:06 yum
05:10 look at that
05:11 this rice grains has not changed its color
05:15 they look nice and bright white
05:18 and also look at the color of these vegetables
05:21 they haven't changed its color either
05:24 looks super
05:28 and this vegetable pulao looks so colorful and nice
05:33 and you don't at all need to compromise on taste
