00:00 Hey guys, I'm Chef Michael Simon and this summer I am partnering with Bank of America
00:04 to celebrate the All-American Cookout.
00:06 We have been asking everyone to use the hashtag #123BBQ to share pictures on social media
00:12 of everything they have been barbecuing and grilling this summer.
00:16 And you have inspired me to share some of my favorite recipes for your summer cookouts.
00:21 Now according to a recent Bank of America survey, 45% of Americans say hamburgers are
00:26 the most popular entree on their menu when hosting the big summer cookout.
00:31 Now I suggest you mix it up a little bit and a great way to do that is chicken.
00:35 So today I'm going to show you one of my favorite.
00:38 Grilled chicken thighs with lemon and a little bit of oregano.
00:47 Now thighs are great because they are inexpensive and they pack a punch when it comes to flavor.
00:52 I like using bone in, skin on thighs.
00:55 So the first thing that you are going to want to do is you are going to want to make this
00:58 little spice mix.
01:00 So kosher salt, brown sugar, a little bit of cayenne, and some smoked paprika which
01:10 gives you that great smoky flavor that I think people really think about when they think
01:14 of barbecue.
01:16 Just take your whisk, break it up, and mix it all together.
01:26 I take my chicken thighs in a bag, you put the spice mix in, you seal it up, and you
01:35 just rub these spices right into your chicken and in the fridge this goes.
01:41 I like to do it overnight if I can.
01:44 Really allows the flavors to get in there.
01:45 Now before you are ready to cook, you take the bag out of the fridge and you let it come
01:50 to room temperature for about 30 minutes.
01:58 I have my grill, I set it up about 10 minutes ago to high, put the lid down to really let
02:03 it get gripping.
02:04 We are just going to pop that open and take our chicken thighs, skin side down to start,
02:12 place them right on the grill and let those start to char up.
02:16 Lid goes down to really ensure that there are no flame ups and to start that chicken
02:21 cooking through.
02:22 Now, I love putting citrus on the grill, whether it's lemons, limes, oranges, grapefruit, you
02:29 put them on the grill and what happens is when these lemons start to char, their natural
02:34 sugars come out and they get really sweet and delicious and it's like, it kind of bumps
02:39 up the flavor of the lemon, it intensifies it.
02:44 We've had the thighs going now for about two minutes just to really get that nice char
02:48 on the skin and once I get these lemons loaded up, I'm going to flip the chicken so we can
02:54 continue to cook them.

02:58 Nice hot grill, great char.
02:59 We don't have to worry about sticking that way because our grill was hot.
03:03 We waited long enough so the chicken got that nice caramelization on it, which is why it's
03:08 flipping so easily.
03:10 Lid goes down.
03:16 Now, you can see here's some that I finished up.
03:24 It's been cooking for about 10 to 12 minutes total.
03:27 I'm going to take those lemons that we grilled and look at how much juice they release because
03:33 they're off that hot grill and they have this tremendous amount of sweetness to them.
03:39 And then I just take a little bit of fresh oregano.
03:43 It's simple, it's delicious, it's inexpensive and it's really light and I think all those
03:48 things are important for the summertime.
03:50 More than half of America's fine sticking to a budget, the absolutely hardest part about
03:54 hosting the Perfect Cookout.
03:56 But it doesn't have to be that hard, guys.
03:58 There are a lot of things that you can do to save money as you barbecue this summer.
