Italian carbonara is famously rich, combining pancetta or guanciale (cured pork jowl), egg yolks, and cheese. In this video, we share Atlanta-based chef Linton Hopkin's own Southern accent to the dish with house-cured pork and local eggs. Combining heavy cream and warm, buttery eggs, this stovetop meal is the perfect recipe for a cold winter day. For Southern goodness, we use a cast-iron skillet, but you may use your skillet of choice.
