T-bone Steak
For the Fat
Seitan
Ingredients
1350 g of whole wheat flour
710 mL of cold water
Method
Mix the flour and water together into a dough. Set out a big mixing bowl and measure out 1350 g of whole wheat flour. Pour 710 mL of water into the flour, which will help you form a nice, firm dough. Knead the dough
Submerge the dough in cold water for 8 hours. Set your dough in the same mixing bowl, covering it all the way with cold water.
Then wrap the bowl with a clean cling wrap.
Wash dough with clean water until only the gluten is left
You may need to make this in batches and freeze what you won't use.
Take 150g seitan, rip it into few small pieces and drop in a high powered food processor.
add 50ml vegan coconut oil.
add msg/Umami/salt
Blend till well mixed.
now it's ready you can keep aside.
T-Bobe steak
Ingredients
*1 cup Canned black beans (Drained) (250g)
*2 tablespoons Nutritional Yeast
*1 tsp Garlic Powder
*1 tsp Onion Powder
*2 tsp Ground pepper
*2 tsp smoked paprika
*2 tbsp Soya Sauce
*1 hoisin sauce
*2 tsp apple cider vinegar
*2 tbsp red wine vinegar (vegan)
*¼ tsp Liquid Smoke
*2 tsp worstershire sauce
*2 tsp maple syrup
*½ cup Vegetable Stock (120ml)
*1 ¾ cups Vital Wheat Gluten (263g)
For the Marinade: (revised version)
*¼ cup lemon juice (60ml)
*1 tsp Paprika
*⅛ tsp Liquid Smoke
*200ml olive oil
*1 tsp salt
*1 tsp crushed garlic
Instructions
Add all ingredients into the food processor besides the vital wheat gluten and process until well mixed.
Transfer to a mixing bowl and add the vital wheat gluten. Stir in with a spoon briefly and then get in there with your hands, mixing it into a dough. Knead the dough for around 2 minutes, you want it to go from sticky and soft to firm and stretchy, so that when you pull it, it snaps back into place. Make sure you don’t over-knead it because that will cause your steaks to become very tough.
As soon as you have a firm, stretchy texture, flatten it out and cut it into your preferred sizes to make your T-bones.
Steam the steak for an hour. Prepare your marinade sauce by adding all the ingredients to a bowl and whisking them together. Let it sit for a little while and then whisk again. You want it to be nice and smooth.
After steaming for 1 hour, place the steaks into a square dish. Pour over the marinade sauce and use a brush to make sure the steaks are properly covered. Turn them over in the sauce a few times.
Braai the steak as per video
Serve the way you prefer, I find mushroom sauce, veg and roasted sweet potato perfect for this steak.
