Betsy Jenny Counselling and Wellbeing Cafe celebrated pancake day by making a thick American style pancake and a thin pancake.

Whisk eggs and milk then add in flour, and beat until the batter is smooth and lump free.

Heat a nonstick pan over low-medium heat with oil. Use 1/3 cup of batter per pancake and cook pancakes for 1 to 2 minutes.

Flip and cook other side.

Serve with maple syrup, berries, chocolate or any other toppings you like.
