Spinach cheese pie with homemade crispy sheet.
We present the preparation of a traditional Greek pie, the spinach cheese pie! The top of all the vegetable pies, in combination with leek and the Greek feta, a cheese with special taste intensities.
Ingredients for the dough:
Flour 750 gr.
water 375 ml
olive oil 90 ml
grape vinegar 45 ml
sea salt 1.5 tbsp
turmeric 1/2 tsp
corn flour to open the leaves
butter & olive oil to open the sheets
Ingredients for the filling:
fresh spinach 500 gr.
leek 1 pc.
scallion 6 pcs.
dill 3 tbsp.
feta 400 gr.
grated gruyere 100 gr.
olive oil 90 ml
black pepper 1/2 tbsp.
a little sesame for sprinkling
a little black caraway for sprinkling
1. Prepare the dough. * Mix the ingredients and knead for 10-15 minutes. Cover the dough and let it rest for about ½ an hour.
2. Prepare the filling. Wash the vegetables well, chop them finely, sprinkle them with salt and let them wither for 15 minutes (except for the dill, which we add together with the cheese). We push them to get their water out. We mix them. Add the coarsely grated cheese, the grated gruyere, the dill, pepper and oil and mix well.
3. The opening of the sheets. Sprinkle with corn flour on the work table and divide the dough into 14 balls - the two slightly larger (they will be the first sheet at the base of the pan). Use the rolling pin to open the dough balls into small sheets of 20 cm each. Spread butter between the sheets in pairs, so we have 7 sheets. Put them aside, cover them with a towel and start to open the first large sheet. To open the leaves we use corn flour.
4. We make the pie. Spread the sheet that we opened in the oiled pan, leaving the excess (about 15 cm on each side) outside the pan. Smear it with oil without pressing it. Continue in the same way to open the next 3 sheets in the size of the pan and place them on top of each other, sprinkling with oil in between.
Add the filling and apply it gently so that it goes everywhere.
Cover the filling with a sheet, oil it and cover it well with the edges of the first sheet. Continue with the next two sheets in the same way. Smear with oil the surface of the pie well and carve it with a knife.
Sprinkle with sesame seeds.
In a preheated oven, bake at 175oC in the air for about an hour. (Each oven bakes differently, check the time in your oven).
* Because each flour has a different amount of gluten you may need to add a little water or a little flour.
