How to Smoke Turkey New Mexico Style - Albuquerque Turkey - BurqueñoBQ

This smoked turkey is injected with a spicy, savory Hatch Green Chile purée that is so tasty it's guaranteed to turn heads! Green Chile and turkey go together like a horse and carriage. A New Mexico Thanksgiving can come in many styles.

That's why I also made videos about making Green Chile Gravy from the turkey drippings, an amazing traditional New Mexican soup called Posole with a broth made from the turkey bones, and of course a Hatch Red Chile sauce to put in the Posole. Everything you need to know for the ultimate New Mexican Thanksgiving!

Here is the recipe for the Green Chile Injection:
1/4 cup Hatch Green Chile
1 tsp coriander sees
1 tsp herbs de Provence
1 tsp brown mustard seed
1 tsp salt
1 tsp diced garlic
1 tsp whole cloves

Purée all ingredients and load into a meat injector.
