Basanti Polao or Mishti Polao, sometimes simply known as polao in Bengal refers to a sweet, ghee-laden rice dish made from fragrant gobindabhog or kalijeera rice, cashew nuts and raisins. This is the main rice dish of choice for any special occasion. Out of the many Indian Chicken Recipes, this Punjabi Dhaba Style Chicken Curry Recipe is one of our favourites. Juicy morsels of chicken simmered in a smoky onion tomato gravy are perfect to pair with some Tandoori Roti, Laccha Paratha or Jeera Rice.

INGREDIENTS for Basanti Polao :
• Gobindobhog Rice /গোবিন্দভোগ চাল – 250 gms
• Cashew nuts/কাজু বাদাম – 2 Tbsp
• Raisins/কিশমিশ – 2 Tbsp
• Ginger grated/আদা কোরানো – 1 inch
• Turmeric powder/হলুদ গুঁড়ো– 1 tsp
• Garam Masala Powder/গরম মশলা গুঁড়ো – ½ tsp
• Sugar/চিনি – 3 Tbsp
• Whole spices for tempering (Bay leaves – তেজ পাতা, Green Cardamom – ছোট এলাচ, Cloves - লবঙ্গ and Cinnamon Stick – দারচিনি )
• Ghee
• Salt
Ingredients for Punjabi Chicken Gravy Recipe:

- Chicken, curry cut with bones- 500 gms

Marinate with:
- Whisked curd/yogurt- 1/2 cup
- Salt- 1 tsp
- Turmeric powder- 1/4 tsp

For paste, to be fried & blended:

- Cumin seeds- 1 tsp
- Green cardamom- 4
- Cloves-3
- Cinnamon- 1/2 inch piece
- Black cardamom-1
- Bay leaf-1
- Onion sliced-2 medium
- Ginger chopped-1” piece chopped
- Garlic cloves- 5
- Oil- 1.5 tbsp

- Tomato purée- 1 cup or purée of 2 fresh tomatoes
- Red Chilli powder- 1 tbsp
- Coriander powder-2 tsp
- Cumin powder-1 tsp
- Garam masala powder- 1/2 tsp
- Kasuri Methi (Roasted and Crushed) - 1 tsp
-- Oil- 3-4 tbsp
