तेलची / सांजोरी
Telchi is also known as a Sanjori.
A traditional recipe of Maharashtra. Specially made during the festivals.

INGREDIENTS:
For Stuffing / Saran:
1 cup Semolina
3/4 cup Jaggery
1/2 cup Water
1/2 tbsp cardamom powder
1/2 tbsp Fennel Powder
1 tbs Ghee

For Outer Covering:
1 cup Wheat Flour
Pinch of Salt
1 tbs Oil
As required Ghee or Ghee to deep fry

INSTRUCTIONS:
Steps:
1) Take a mixing bowl. Add water and grated jaggery mix well till the jaggery dissolved. Then add cardamom powder and fennel powder. Mix well.
2) Meanwhile, Heat the kadhai. Add Rava and ghee roast well till it becomes golden and aromatic. Switch off the gas. Let it cool down.
3) Now add roasted Rava and mix all ingredients together.
4) Take another mixing bowl. Add wheat flour, and pinch of salt. Add sufficient water to make a soft dough.
5) Roll it into a small circle. Fill the stuffing in the center. Seal the edges and press gently.
6) Roll it evenly and carefully into small size puri.
7) Heat the oil in a kadhai. Oil should be medium hot. Deep fry the Telchi till golden in color on both sides.
8) Drain and remove it on tissue paper. Let it cool down. Telchi is ready to serve.
