Achaari Vegetable Pulao:
Ingredients:
Rice 750 gm
Carrot cubes 1 cup
Capsicum cubes 1 cup
Potato cubes 2 cups
Green peas boiled 1 cup
Cauliflower 1 cup
Curry leaves 10 -12
Oil ½ cup
Ginger garlic paste 1 tbsp
Green chili paste 2 tbsp
Onion slices 1 cup
Tomato slices 1 cup
Yogurt ½ cup
Red chili powder 1 tbsp
Salt as required
Cumin 1 tbsp
Fennel seeds 1 tbsp
Fenugreek 1 tbsp
Mustard 1 tsp
Nigella seeds 1 tbsp
Turmeric powder 1 tsp
All spice powder 1 tsp
Food color as required
METHOD:
Pan men oil dal ker piyaz ko golden brown ker len ab lehsan, adrak or hari mirchon ka paste dal ker bhoon len ab tamam masalay dal ker bhoon len phir dahi or tamam del ker mazeed itna pakaen kay oil alag hojae ab pani dal ker ubal anay den ab chawal or foodcolor dal ker dum per chor den.

Aalu Ka Raita:
Ingredients:
Potato boiled and mashed 1 cup
Yogurt 1 cup
Oil ¼ cup
Cumin 1 tsp
Black pepper crushed 1 tsp
Chaat masala 1 tsp
Salt as required
Whole red chili 6- 8
Curry leaves 6- 8
Water as required
METHOD:
ek mixing bowl men potato, yogurt, salt, cumin, chat masala, black pepper or pani dal ker mix ker len. Or phir ek pan men oil garam ker kay curry leaves, cumin or sabit lal mirch dal ker tarka bana len or raita per dal ker serve Karen.

White Masala Daal:
Ingredients:
White lentil 1 cup
Oil ¼ cup
Ginger garlic paste 1 tbsp
Onion paste 1/2 tbsp
Green chili paste 1 tbsp
Yogurt ¼ cup
Salt as required
White pepper 1 tsp
Chicken powder 1 tsp
Cumin powder 1 tsp
Cream ½ cup
Fresh coriander for garnish
Ginger julienne for garnish
METHOD:
pan men oil dal ker piyaz la paste ker len ab lehsan, adrak or hari mirchon ka paste dal ker bhoon len ab dahi or tamam masalay dal ker 3 se 4 minutes tak pakaen ab ubli huee daal dal ker mix Karen or achir men cream ker ker itna pakaen kay oil alag hojae phir dhaniya or adrak dal ker serve Karen.
