Besani mirch:

Ingredients

German chili 250gm
Tomatoes ½ kg
Dried fenugreek 2tsp
Coriander whole 1tsp
Cumin 2tsp
Green chilies 4
Red pepper crushed 2tsp
Salt 1tsp
All spice ½ tsp
Curry leaves 6
Lemon juice 4tbsp
Turmeric ½ tsp
Gram flour 1cup
Flour ½ cup
Carom ½ tsp
Coriander ½ bunch
Ginger 1tbsp
Oil ½ cup

Method
In a bowl add flour, gram flour, carom, red pepper crushed salt, tomatoes , all spice , lemon juice, coriander and ginger mix and make a mixture, now dip the German chilies in this mixture and fry and remove. Now in remaining oil add curry leaves , coriander , cumin , dried fenugreek, green chilies and turmeric make masala .now add German chilies, green chilies and remaining ginger , sprinkle lemon juice and coriander and serve.

Malai paneer :

Ingredients

Cottage cheese 250gm
Yogurt 250gm
Onion chopped 1cup
Green chilies 1tbsp
Asafoetida ¼ tsp
Red chilies 2tsp
Salt ½ tsp
Turmeric ½ tsp
Coriander powder 1tsp
Coriander, green chilies as required
Ginger garlic 2tsp
Whole spice 1tsp
Corn flour ½ cup
Oil ½ cup
Cream ½ cup

Method
Cut the cottage cheese in cubes , now coat them in corn flour and fry , now in the oil add onions roast it, now add spices with yogurt and roast till gravy gets thick , add ½ cup water , coriander , green chilies and cream simmer 5 min and serve.

Masalaydar Tinday:

Ingredients

Round melon ½ kg
Onion 2
Green chilies 10
Green coriander 1 bunch
Mint ½ bunch
Roasted cumin 2 tsp
Garlic 6 cloves
Lemon juice 4 tbsp
Yogurt 250 gram
Salt 1 tsp
Whole roasted coriander 1 tsp
Mango powder 2 tbsp
Oil ½ cup
Method
Put onion, green chilies, green coriander, mint, cumin, whole coriander and garlic in chopper and make it fine. Now cut round melon from top and take out all the pulp then put ½ tsp salt and leave. Then mix pulp in chopped mixture. Then add salt and mango powder and fill them in round melon. Now heat oil add round melon and cook them on low flame for ½ an hour covered. When they get tender then add beaten yogurt and lemon juice and sauté on high flame. Then turn off the flame.
