Learn how to make amazing Gujarati Style 'Kadhi Khichdi' with our chef Varun Inamdar.

Kadhi & khichdi are both an essential part of Gujarati Food Cuisine. Gujarati kadhi is a Gujarati version of kadhi which is lighter compared to other varieties of kadhi. It is a very popular Gujarati dish made from curd and gram flour. While Khichdi is very nutritious & comforting, and it combines brilliantly with Kadhi.

Ingredients for Khichdi:
(Serves 4))
- 2/3 cup Rice (washed & soaked)
- 1/3 cup Moong Dal(split)
- 1 tsp Turmeric powder
- 1/2 tsp Asafoetida
- Salt
- 4 cups Water
- Emami Healthy & Tasty Refined Sunflower Oil

Ingredients for Kadhi:
- 1/2 cup Curd
- 2 tbsp Gram Flour
- 2 cups Water
- Emami Healthy & Tasty Refined Sunflower Oil
- 1 tsp Cumin Seeds
- 2-3 Dried Red Chillies
- 1 inch Cinnamon Stick
- 1 Star Anise
- 2-3 Cloves
- 1/4 tsp Asafoetida
- 10-12 Curry Leaves
- 1 tbsp Sugar
- Salt
- Coriander leaves

Method:
1. In a pressure cooker add rice, moong dal, turmeric powder, asafoetida, salt, water, and Emami Healthy & Tasty Refined Sunflower Oil
2. Cover the pressure cooker with its lid and heat it over a medium flame for two whistles which will take around 10-15 minutes
3. In a large bowl take curd and add untoasted gram flour
4. Whisk both of them together and add water
5. Now, in a separate pan heat Emami Healthy & Tasty Refined Sunflower Oil
6. Add cumin seeds, dried red chillies, cinnamon stick, star anise, cloves, asafoetida, curry leaves to it
7. Now, add whisk mixture to the pan along with sugar & salt
8. Mix well and allow it to boil for around 5-7 minutes/ till it gets a little thick
9. Keep stirring in between, to prevent the kadhi from sticking to the bottom
10. Garnish kadhi with some chopped coriander leaves
11. Open the lid of the pressure cooker and take khichdi out in a serving bowl and serve it with hot tasty kadhi
