KALEJI KHARA MASALA:
Liver (Beef or Mutton) 1kg
Ginger 1tbsp
Garlic 1 tbsp
Green chili paste 1 tbsp
Oil 1 cup
Red chili powder 1 tsp
Red chili crushed 1 tsp
Turmeric powder 1 tsp
Fenugreek seeds 1 tsp
Carom seeds 1 tsp
White cumin 1 tbsp
Whole coriander 1 tbsp
All spice powder 1 tsp
Tomato chopped 1 cup
Yogurt 1 cup
Onion chopped ½ cup
Green coriander 1 tbsp
Green chili (julienned) 4 to 6
Ginger (julienned) as required
Method:
Heat oil in wok, add ginger garlic paste, and cook well. Add liver sauté well. Add all spices and green chili paste except fenugreek, cook for 1 to 2 minutes. Add tomatoes, onion and yogurt mix well and left to simmer. When the liver is done, add green coriander, green chilies and ginger cook well. Apply baghar of fenugreek in the end.

BEEF STEAK WITH PEPPER SAUCE & SIDELINES:
Beef undercut fillet 500kg
Garlic 1 tbsp
Mustard paste 1 tbsp
Salt as required
Black pepper 1 tsp
Oil 2-3 tbsp
Worcestershire or soya sauce 2 tbsp
Lemon juice 1 tbsp
Method:
Mix beef undercut with all ingredients in a mixing bowl. Keep in fridge for 2 hour. Heat grill pan very well. Apply oil and place a stake on it. When marks appear on steak turn its other side till marks comes. Turn the flame low and cook till steak is done. Serve steak with pepper sauce and vegetable.
SAUTÉ VEGETABLE
Butter 2 tbsp
Carrot (strips) ½ cup
Potato (strips) ½ cup
Cauliflower (strips) ½ cup
Sam ki Phali ½ cup
Salt as required
Chicken powder 1 tsp
Oregano ½ tsp

Method:
Heat butter in pan adds all vegetables with spices cook for 1 to 2 minute on high flame.
PEPPER SAUCE
Butter 2 tbsp
Onion chopped 1 tbsp
Beef stock 1 cup
Cream ¼ cup
Black pepper crushed ½ tsp
Salt as required
Mustard paste 1 tsp
Method:
Heat butter in pan add onion cook for 1 to 2 minute. Add beef stock, mustard, salt, black pepper cook more for 2 minute. Add cream cooked till sauce becomes thickened.
