Experiment With Different Fillings With This Homemade Filled Flatbread

You'll need:

For the dough:

- 2⅘ cups flour
- 1¾ tsp dry yeast
- 1 tsp sugar
- 1 pinch baking powder
- 1 pinch salt
- 2 tbsp yogurt
- 6 fl oz water

For the filling:

- 5.3 oz tomato sauce
- 8.8 oz cooked ground beef (seasoned to taste)
- 1 oz chopped, dried tomatoes
- 1 red onion, sliced
- 1 chili, sliced
- a few basil leaves
- 2 branches rosemary
- zest of half an unwaxed lemon

Here's how:

Put all the ingredients for the dough into a bowl and mix them together with an electric whisk. Cover the bowl with the dough in it and leave it in a warm place for 40 minutes.
When it's ready, divide the dough into two portions and roll it out on a floured work surface into two circles about 10 inches across.

Cover one of the dough circles with tomato sauce, leaving a gap of about 1 inch without sauce around the edge. Evenly distribute the cooked beef, tomatoes, onion, chili and basil. Pull the leaves from the rosemary branches and sprinkle them on. Lastly, zest the lemon over the filling.
Now cover everything with the second dough circle and pinch the edges together. Then bake the flatbread for about 8 minutes in a convection oven pre-heated to 390°F.
