Hot pot can be found everywhere in China, but nowhere is it as spicy—or as prevalent—as it is in Chongqing, considered the hot pot capital of the world.

Here, people live and breathe hot pot, a communal way of eating that involves dipping slices of meat and vegetables into boiling water seasoned with chiles and peppercorns.

The face-numbing heat of Chongqing hot pot is famous, but there’s more to this dish than its spicy kick. Chongqing hot pot is in a league of its own.

What makes it stand out? We went to a local hot pot restaurant to break down the subtleties of the world’s spiciest hot pot.
