Ingredients:
1 cup Split Black Lentils (soaked)
2 Green Chillies
½ Inch Ginger
Water
Salt
Oil for Frying
1 ltr Butter Milk
For Sweet Chutney
½ cup Dates (seedless)
½ cup Tamarind
½ cup Jaggery
2 cups Water
½ tsp Dry Ginger Powder
1 tsp Red Chilli Powder
1 tsp Roasted Cumin Seeds Powder
Salt
For Green Chutney
1 cup Coriander Leaves
2 Green Chillies
1 Garlic Clove
¼ cup Mint Leaves
½ Lemon Juice
Water
Salt
For Yogurt
3 cups Curd
½ cup Sugar
Salt
½ cup Water
Method: Let’s start with grinding Black Lentils (soaked) with Green Chillies & Ginger. Next grind the mixtures to nice paste, to which add Water in between. Once the batter is ready remove it on to the bowl then add Salt and mix it properly. In the meantime do heat up the Oil. Next, make small balls from the batter and put them into the Oil one by one. Keep the flame high for a minute then reduce its medium, so that Vada’s get cooked from inside as well.
Next, take Butter Milk in the bowl, and once Vada’s are cooked properly soak them into Butter Milk. Next make the Sweet Chutney for which add Dates (seedless) with Tamarind, Jaggery, Water, Dry Ginger Powder, Red Chilli Powder, Roasted Cumin Seeds Powder & Salt. Next, cook it till the Date is got soft and Jaggery is melted completely.
In the meantime let’s make Green Chutney for which add Coriander Leaves, Green Chillies, Mint Leaves, Lemon Juice. Next, grind it to a fine paste with water added later and your Green Chutney is ready, remove it in the bowl and add Salt.
Next, one Sweet Chutney is cooked properly keep it aside to cool down then grind it to fine paste same as Green Chutney.
Next make Yogurt for which take Curd in the bowl to then add Sugar and Salt, then beat it properly (as shown in the video) then add Water. Now place the Vada in the serving plate on which pour the Curd, then garnish it with roasted cumin seed powder, Chilli Powder, Chat Masala, Sweet Chutney, Green Chutney, and little Coriander and your Dahi Bhalla is ready to serve.
