Marmalade Cake With Gin Twist | Good Housekeeping UK

This tasty gin loaf cake is made using blood orange gin and a zesty marmalade topping.

Ingredients
200 g butter
175 g light brown sugar
100 g marmalade
3 large eggs
Finely grated zest and juice of 1 orange
225 g self-raising flour
75 ml blood orange gin, we used Malfy Con Arancia
FOR THE DRIZZLE
Pared zest and juice of 1 orange
1 tbsp. blood orange gin
25 g sugar cubes

Directions
1. Preheat oven 180°C (160°C fan) mark 4. Grease and line a 900g (2lb) loaf tin. In a large bowl beat together the butter and sugar until pale and fluffy, around 5min. Beat in the eggs one at a time, then whisk in the marmalade until fully combined.
2. Beat in the zest and orange juice, then fold in the flour and finally the gin. Bake in oven for 45min-1hr until a skewer inserted into the middle comes out clean.
3. Mix together the gin and orange zest and juice with the sugar. Spoon evenly over the warm cake and once it has soaked in slightly, remove using the corners of the baking paper, to a wire rack to cool completely. Cut into slices to serve.
