Learn how to make beautiful ice cream bombes and layered ice creams with our step-by-step video.

1. To create layered ice creams, make 2 or more flavoured ice creams with distinct colours. Line a freezerproof container with cling film and, while ice cream is still a bit soft, pack it in to bottom of container then level with a spoon. Cover and freeze until firm.

2. Then layer second ice cream on top and freeze until firm. Repeat with as many layers as desired.

3. For ice cream bombes, take a round mould or bowl and line with cling film, allowing plenty of excess to hang over sides. Press first flavour of softened ice cream into sides and base of mould, leaving a hollow in centre. Carefully line ice cream with cling film and freeze until firm.

4. Remove cling film and fill hollow with second flavour. Be generous with ice cream to avoid any gaps. Finally add a layer of the first flavour of ice cream across whole top of bombe, to completely hide ice cream inside. Cover with excess cling film and freeze until firm.

5. Rippling or marbling works best with a vanilla ice cream base. Drizzle softened ice cream with a fruit puree. Using a skewer, stir puree through ice cream in random, swirling directions until rippled effect is achieved. Freeze until firm.
