60-second pesto with Nadia Sawalha

Got 60 seconds to spare? Then why not try Nadia Sawalha’s super-quick and delicious mixed herb pesto. You’ll wonder why you ever bought the stuff! Perfect for pasta, it's easy, fresh and freezable (yes, really!) - making it the ultimate stand-by for any dish that needs an extra kick of flavour. Full recipe below.

Ingredients:
1 bunch of tarragon
1 bunch of basil
1 bunch of chives
1 bunch of mint
1 bunch of parsley
Zest of 1 lemon
50g toasted pine nuts
40g parmesan
Roughly 100ml olive oil
Salt to taste

Method:
Bung it all into a food processor and blitz. It’s as easy as that.

Optional:
Spoon into an ice tray and freeze to have an intense burst of flavour on standby.
