Undhiyu is a traditional Gujarati preparation of mixed vegetables prepared especially during winters.Cooked in an aromatic blend of spices, this dish is very healthy and tasty. Try this version of Undhiyu made by our chef Smita and share your experience with us.
Ingredients
150 gms surti papdi
½ cup of fresh tuvar
8 small brinjal
10 baby potatoes
1 small sweet potato
1 medium raw banana
150 gms purple yam
FOR THE MUTHIA:
1 cup of methi leaves
1 cup of gram flour
1 tsp ginger, garlic and green chilli paste each
¼ tsp turmeric powder
½ tsp coriander seed powder
½ tsp cumin seed powder
Juice of ½ a lemon
Salt to taste
Oil for frying
FOR THE MASALA
1 cup grated coconut
½ cup finely chopped coriander leaves
2 tbsp sesame seeds
1 tbsp ginger and garlic paste each
1 tbsp green chilli paste
3 tsp coriander seed powder
1 tsp cumin seed powder
3 tbsp sugar
Juice of 1 lemon
Salt to taste
FOR THE TEMPERING
½ tsp carom seeds
A pinch of asafetida
¼ cup oil
METHOD:
String the pods of the surti papdi
Peel the potatoes, sweet potatoes and the yam.
Chop the yam and the sweet potatoes into 1” cubes
Chop the stalk of the brinjal and slit it criss cross for stuffing
In a bowl mix the ingredients for the muthias and add little water and make a sticky dough and roll them into coin size balls and fry them golden
For the masala mix all the ingredients together well and keep aside
Stuff the masala in the brinjal, slit the potatoes also criss cross and stuff the masala in that too. Make a deep slit in the banana as well and stuff the masala in that too.
Coat the rest of the vegetables also with the masala
Heat the oil and add the carom seeds and the asafetida and then add the surti papadi and the tuvar and then add some of the masala. Stir it for 3 -4 minutes and add a neat layer of the yam
Next layer should be with the banana and the sweet potatoes
Next layer should be of the brinjal and the potatoes sprinkle all the masala and the add the muthias and pour ½ cup of water and cover and cook till the vegetables are done
Serve warm with some pooris or rotis
