On the festive occasion of Christmas, learn how to make whole Roast Chicken at home in oven from our chef Smita Deo on Ruchkar Mejwani. Roast Chicken is an easy to make chicken recipe where whole chicken is marinated in olive oil, garlic paste and fresh herbs. The chicken is served with roasted vegetables and onion sauce.
Ingredients:
1 Whole Chicken
1/2 Cup Extra Virgin Olive Oil
1 tbsp Garlic Paste
1 tbsp Black Pepper Powder
Thyme Herb
Salt to taste
1 Lemon
1 Bunch of Garlic
Broccoli, blanched for 5 minutes
1 Red Capsicum, chopped
2-3 Carrots, chopped
Baby Potatoes, cut into half
For Gravy
2 Onions, chopped
3 tbsp White Vinegar
3 tbsp Worcestershire Sauce
1 inch Cinnamon
10 Cloves
1/2 tsp Black Pepper Powder
2 tbsp Corn Flour
1/2 litre Chicken Stock
Method:
- In a baking dish place the whole chicken
- In a bowl add extra virgin olive oil, garlic paste, black pepper powder & salt. Mix everything well.
- Apply this marinate onto the chicken along with thyme.
- Stuff the chicken with a whole lemon and a bunch of garlic.
- Apply little of the marinate to the chopped vegetables like baby potatoes, broccoli, red capsicum and carrots. Place these vegetables alongside the chicken.
- Roast the chicken in an oven for 25-30 minutes on 200 degrees Celsius.
- To make the sauce in a pan add chopped onion, white vinegar, Worcestershire Sauce, cinnamon, cloves, black pepper & chicken stock. Also add corn flour mixed with water.
- Switch on the flame and let the sauce boil for 5 minutes.
- Once the sauce becomes thick, switch off the flame.
- Pour this sauce on the cooked chicken.
- Roast Chicken is ready to be served.
