Number one, the time of day, if it is, if your event is right after lunch of course then you are not necessarily looking for a heavy menu, if it is early evening and around dinner time, then it would be more appropriate to have a heavier menu. Also the style of affair that you are having, whether it is informal or formal. Say if it is informal you may only be looking at three to four items for a dinner or a lunch versus if it is a formal dinner or lunch, you may look at anywhere from three to six courses. But it totally depends on the time of day, the number of guests you are anticipating. And also the age group of your guests. If it is an older they are going to eat much less than say a younger crowd. So you need to keep all of these in consideration when trying to determine the number of courses for your event.
