Tangy Tomato Rice

Ingredients:

4 cups cooked rice
2 medium size tomatoes diced
1 1/2 tbsp soaked chana dal
1 large onion finely chopped
1/2 tsp mustard seeds
1 tsp turmeric powder
1/2 tsp red chilli powder
1 tsp cumin seeds
1 inch ginger
1 tsp garlic
1/2 tsp sambar masala
1-1 1/2 tsp oil or ghee
6-8 curry leaves
Cilantro for garnishing
Some green chillies
Salt and pepper to taste

Preparation:
Heat the ghee in a saucepan over a medium flame.
Put in the mustard seeds.
As soon as the seeds start to pop, put in the chillies, diced onions, turmeric, cumin seeds, garlic, ginger and channa dal.
Put in the tomatoes, sambhar masala, salt and pepper.
Add rice to the well cooked mixture.
Add the curry leaves to the rice and the delicious tomato rice is ready to serve.
