We spoke with the creator of the viral Dubai Chocolate, Chef Nouel Catis about the limited-time desserts he came up with in collaboration with specific restaurants around Metro Manila.

00:00I'm Chef Noël Katiz. I'm a Dubai-based heritage pastry chef and also famous for the original
00:07creation of the Dubai chocolates. As a first collaboration ever in the Philippines, so
00:12I always look into what each of the brand has to offer. So for example, for Amano, we
00:18looked into the famous burrata soft serve. So I just put a sprinkling of melted dark
00:24chocolate. We also have the pistachio kunafa crunch around it and the crowning jewel is
00:29of course some chopped pistachios so we put it there and kataifi. For steak and
00:33fries we also went into diving into their crepe menu. So I made a chocolate version
00:40of the crepe and inside we have put the crunchy element of the pistachio kunafa
00:45and then we also put a bit of the custard. Inside it has also pistachio flavor and
00:51outside is a drizzling of chocolate and pistachio. And for the third one which
00:56is ramen run, what else to bring to the table but of course the mochi right?
01:00They're famous for it. So what we did was again we put the Dubai chocolate spin
01:05inside which is a pistachio kunafa crunch. We also have their signature we have the
01:10mascarpone cream inside and lastly we also put a layer of the namelaka pistachio
01:16namelaka which is again very Japanese and also we coated it with a little bit of
01:22chocolate and it becomes a wholesome Dubai chocolate mochi dessert.
