This simple weeknight dinner features fried fish coated in a crispy golden-brown matzo crust and a red cabbage slaw.

00:03Fried fish is one of the most delicious, simple dinners
00:07you can make for yourself.
00:08And when you're frying it in matzah, even better.
00:11The matzah gets really crispy,
00:14like extra crispy somehow on the outside.
00:17We are gonna use it here as the substitute
00:19for a panko bread crumb.
00:21I really love the matzah for that fine ground,
00:24extra toasty flavor that it brings.
00:27You can fry any thin white fish you like.
00:30I'm using flounder today.
00:32I firmly believe that when you are breading anything,
00:36you should absolutely salt the thing
00:38that you are about to bread,
00:40not any of the breading materials.
00:43Time to drench.
00:44Make sure you keep your dry hand and your wet hand separate.
00:49So into the rice flour first.

00:56I love matzah.
00:57I'm kicking it up here with garlic powder
00:59and onion powder and also black pepper.
01:02We're gonna go back onto the baking sheet.
01:03We need to talk about setting up your fry station
01:07so that you can have a stress-free,
01:09super successful frying experience.
01:12Thermometer.
01:13You want that oil to stay at a super consistent temperature.
01:16Another thing that's gonna really help you out
01:18is gonna be a fish spatula.
01:20It is long enough and it is heavy-duty enough
01:22to pull heavier things out of oil
01:25in a shallow frying sort of situation like this.
01:28And the last thing that you're gonna want to make sure
01:29that you have is a metal sheet pan
01:32with a wire rack sat inside of it right next to the oil
01:36so that once your fish is fried,
01:38it can go right on there to drain.
01:40So we're at 350 degrees right now on the thermometer,
01:43which means we're ready to go.
01:45When you lay it in, you are gonna lay it in away from you
01:51so that if any oil splashes, it goes that way.
01:53We're gonna go for two minutes about on each side
01:57just until it's golden brown underneath.
02:00That's when you know how to flip it.
02:01So if you are using a different type of fish,
02:04depending on its thickness,
02:05two to four minutes before flipping
02:08is a good standard range that should apply to most fish.
02:11If you find that there are pieces of your fish
02:14that are getting less white,
02:16take a spoon and just baste a little oil
02:19over the top of the fish
02:20in the place where it's not getting as brown.
02:22We always salt things that come out of the fryer
02:25as soon as they hit the rack.
02:27Anytime you're having something crispy and fried,
02:30I want something crunchy and refreshing
02:33to go along with it.
02:34You're going to do a super simple red cabbage thaw.
02:38Just some cabbage, finely chopped,
02:40or you can shred if you prefer,
02:43and a little lemon juice and salt.
02:45Whether you're celebrating Passover or not,
02:47this matzo fried fish should definitely be
02:50in your dinner rotation.
