This one-pan salmon and potato recipe is perfect for a weeknight. Plus, it has a yogurt sauce you'll want to smear on everything.

00:05Hey everybody, welcome to Brooke's One Pots in the Delish Kitchen studios.
00:10I'm Brooke and I'm going to teach you how to make our most popular,
00:13most delicious weeknight dinners all in one pot, one pan, or one sheet tray.
00:19And the best part of all of this, I'm going to recommend a song
00:22that you can dance along to while we cook.
00:24A classic hit to go with your one pot wonder.
00:27Tonight's dinner is going to be a salmon and potato skillet.
00:29This one is inspired by one of my grandfather's favorite recipes.
00:33It's got garlic and spice marinated salmon and then crispy on the outside,
00:36but fluffy on the inside potatoes with a cooling yogurt-y creamy sauce to go with it all.
00:42Ah, this is going to be out of this world.
00:51For this recipe, all the equipment you need is a 12-inch skillet,
00:54cutting board, a couple of measuring spoons, a microplane,
00:58a fish spatula, a whisk, and a wooden spoon.
01:01You can't have a salmon and potato skillet without potatoes.
01:04My potato of choice is going to be a baby potato.
01:07The reason I want to go with the baby potato is because they don't require boiling before roasting,
01:12like a lot of potato varieties do, like a russet potato.
01:14You can throw these straight in the oven and it'll still be cooked through
01:17and it'll be nice and creamy and fluffy in the middle,
01:19but it'll be crispy on the outside, which is tough to do with other varieties of potato.
01:24I also love using tricolor baby potatoes for this.
01:27They don't taste any different, I just think they're really pretty.
01:29So this is about a pound and a half of potatoes.
01:32Gonna drizzle with a little bit of oil and sprinkle these with just some plain old salt and pepper.
01:37Potatoes usually take a little bit more salt than you think they're gonna need,
01:40so don't be afraid to be generous with the salt.
01:44Got a large cast iron skillet that I have been preheating in the oven
01:49and I'm gonna start adding my potatoes to it.
01:50The reason I preheated the skillet is to sort of speed up the potato cooking process.
01:56We want them to get that nice crusty outer layer,
01:58so you need really high heat for that.
02:00You don't want to do it in a cold pan,
02:02but this will sort of speed up the potato cooking process for you.
02:05You guys can probably even hear the noise of the potatoes cooking in this really hot skillet.
02:09They're starting to sear already.
02:11I'm gonna put these back in the oven
02:13and they're gonna roast for about 20 minutes while we marinate the salmon.
02:16This is my potato bowl with all that oil and salt in it.
02:19Instead of washing it, I'm just gonna wipe out the extra oil.
02:23This is the bowl our marinade's gonna go into and I don't want to make any extra dishes.
02:27Before I get going on the marinade though,
02:30I'm gonna actually cut these shallots into rings
02:32because these are going to go into the skillet with the salmon and potatoes
02:36just to add a little bit of gentle onion-y flavor to the whole thing
02:40and they're gonna get nice and roasty and sweet.
02:43Salmon is one of those proteins that really takes well to marinate,
02:46so I like to pack a ton of flavor into my marinades when I'm cooking salmon.
02:50First thing I'm doing is just grating some fresh garlic into this big old bowl.
02:55Then we're going to use this same tool to get about a teaspoon of zest from this lemon.
03:01I'm not going to measure this one because I've zested a lot of lemons in my life
03:05and I know that one lemon will yield you about a teaspoon of zest.
03:09To this bowl, we're going to add a litany of seasonings.
03:12All these play really well together with salmon and with Greek yogurt
03:15and with the herbs that we're putting on top.
03:17I'm gonna start with a little bit of paprika,
03:20adding a little bit of crushed red pepper for some heat.
03:23Then we're going with coriander.
03:24Honestly, coriander is one of my favorite spices.
03:27It's just so interesting.
03:29It's warm and it makes all your food have that quality
03:32that'll make people ask you for the recipe.
03:34It's got like a lot of really complex notes in there.
03:36It's a little bit floral, a little bit earthy.
03:3810 out of 10 every time.
03:40And then some cumin, half a teaspoon of salt,
03:43which for me is about two pinches,
03:45and about a third cup of oil.
03:46And then we're going to mix everything all together
03:49just until it's evenly blended.
03:50You're not looking for it to change a whole lot here.
03:52I'm gonna season this salmon up on both sides with a little bit of salt.
03:57I'm going to get a Ziploc bag to marinate this salmon
04:00because you guessed it, I don't want to do an extra dish.
04:03It doesn't really matter if it's skin side up or down.
04:06It'll be about the same either way.
04:08And to this bag, we're going to add half of this marinade.
04:12We're not using all of it for the salmon
04:14because we're going to use the other half for the yogurt sauce.
04:17I'm going to seal that up.
04:18I'm going to massage it around a little bit
04:20just to make sure the marinade is hitting all of the salmon.
04:23This can just hang out in the refrigerator while our potatoes roast.
04:27It's time to finish up that herby yogurt sauce
04:30that's going to go on top of the whole shebang
04:32when it comes out of the oven.
04:33All we have to do is just add a couple of things
04:35to the rest of that marinade that we have from our salmon.
04:38When it comes to these kinds of seasonings,
04:40your corianders and your paprikas and garlics and lemons and stuff,
04:44I really love to use a combination of dill and parsley.
04:47So that's what I'm going to top all this with.
04:49You should really only need about two tablespoons of herbs
04:52for this whole situation.
04:53I think I might actually save some of these
04:54for my garnish a little bit later though.
04:56So into this marinade bowl,
04:58I'm just going to add a little bit of a Greek yogurt,
05:01two tablespoons of herbs.
05:02I'm going to use my whisk to just bring all of this together.
05:07It smells so freaking good.
05:08And I'm going to hit this with a little bit of salt and pepper
05:11right before I serve everything.
05:14Potatoes are getting nice and crispy
05:16and our salmon is done marinating.
05:18So I'm going to go ahead and make a space
05:20in the center of this pan,
05:22big enough for the salmon to fit in.
05:24And your potatoes should have already started
05:26getting that nice brown, crispy exterior on that cut side.
05:30So don't worry about them not getting crispy
05:32when they're over on the edge.
05:33They'll still be cooking through while the salmon cooks.
05:35All right, so now the salmon is going to go in this skillet.
05:38You don't need to put any oil down in the skillet
05:40because we have a lot of oil in the marinade already.
05:42Skin side down.
05:44Last but not least, before the salmon and potatoes
05:46goes in the oven,
05:48I'm going to top it with those shallot rings
05:49that we sliced earlier.
05:51You can keep them sort of like
05:52in those concentric shallot circles,
05:54but for some of them,
05:55you want to like separate some of the circles
05:57so that you have enough shallots to cover everything.
05:59So you're not getting like a big giant shalloty chunk
06:01in every single bite.
06:02Before this goes back into the oven,
06:04I want to tell you guys what your song is going to be
06:06for this salmon and potato skillet.
06:08This recipe was inspired by something
06:09my grandpa used to make for me all the time.
06:11So naturally, I had to pair this with his favorite song,
06:14which is A Change Is Gonna Come by Sam Cooke.
06:17When I called him to ask what his favorite song was,
06:20he said it was called Born By The River
06:21and I had to do my own sleuthing
06:23to figure out exactly what he meant.
06:25And so it's going to be A Change Is Gonna Come by Sam Cooke.
06:28A soul warming song for a soul warming dish.
06:30That's going to cook for about six to seven minutes.
06:35They were going to flip it and let that skin start to crisp up
06:41for about two to three minutes.
06:42My only struggle with developing this salmon and potatoes recipe
06:46as being inspired by my grandfather's recipe
06:49is that if I fed him this,
06:51he would literally be like, Brooke, what the hell is this?
06:53Our version of salmon and potatoes that we used to eat
06:55was literally canned salmon,
06:57a russet potato that he cut with a rusty knife.
07:00It was fried to oblivion until it got nice and crispy
07:02and charred on the edges.
07:03And then we put it in a big bowl with some ketchup
07:05and it was delicious.
07:07So this is not quite the same thing,
07:09but very much the same spirit.
07:10Oh boy, it is smelling so good in here, y'all.
07:14I can smell that marinade coming through.
07:16I can see how crispy my potatoes got
07:18and it's just making me so excited.
07:21I just want to sit here and stare at this for a little bit longer,
07:23but I have a job to do
07:25and that's to cut this salmon and serve myself a piece.
07:28I'm going to go with the thicker part.
07:29Look how golden brown the potatoes got, y'all.
07:32Look at that.
07:33Last but not least, I'm going to give myself a little bit
07:36of this herby marinade yogurt situation here.
07:39And honestly, this is good for both the salmon and the potatoes,
07:42so don't be shy with it.
07:43Then I'm going to hit this with a flurry of my freshly chopped herbs.
07:48And then of course, a squeeze of lemon
07:49because you can't have salmon without a squeeze of lemon.
07:52This one's for you, Gramps.
07:56Whoa, that is so incredibly good.
07:58It's just flavor-packed.
07:59While this is definitely different
08:01than the skillet canned salmon and potatoes recipe my grandfather taught me,
08:05it still has the same effect.
08:07Like, my heart is smiling eating this.
08:09It's so soul-warming and it's such a perfect fit for his favorite song,
08:12A Change Is Gonna Come, by Sam Cooke.
08:14So pop that on the record player while you make this
08:16and I promise you will feel like a warm hug from your grandpa.
08:20Now comes time for a little bit of reality
08:22and that reality is that we have some dishes to take care of, but...
08:26Oh my god, it's only a couple of them.
08:28I love one pots, they're so great.
08:31I'm gonna go ahead and do the dishes like an adult.
08:33This isn't gonna take no time at all.
08:36When you're cleaning a cast iron skillet,
08:38you can get a lot of bad advice,
08:40but the one thing you want to remember is it needs to be properly seasoned.
08:43So as long as your cast iron skillet is properly seasoned ahead of time,
08:47what you do to it in your daily cleaning isn't gonna destroy it.
08:51Since we cooked fish in this cast iron today,
08:54I do want to hit it with a little bit of soap and a soft scrub
08:57just to get that fishy flavor out.
08:59Luckily, we don't have anything stuck to this pan, so this should be pretty simple.
09:03That's pretty much it, y'all.
09:04My grandpa would be so proud of you.
09:06He really would be for what you've accomplished today.
09:08That salmon and potato skillet was 10 out of 10.
09:11And the dishes are already done and I'm nice and full.
