00:00Heyo, Scott here reporting from Pizza University, where I'm going to teach you how to calculate
00:05the proper dough ball size for any size pizza.
00:09It only takes a little bit of math and a lot of joyous nature.
00:14So I'm going to show you how to do this here at Pizza University in the Start Smart class.
00:18We have been using a 355 gram dough ball to make a 12 inch New York style pizza.
00:24If you like that size pizza with that size dough ball, I got great news because we can
00:29figure out exactly how many grams per square inch we used for that dough ball.
00:34All you need to do is figure out that a 12 inch pizza has a surface area of 113 square
00:41inches.
00:42So just to bring you back to middle school, that means pi r squared, right?
00:47That's the area of a circle.
00:49So since the radius of a 12 inch pizza is six inches, six squared is 36, multiply that
00:56by pi 3.14 something, something, something, and you get 113 square inches.
01:01If you divide your grams, 355 grams by your square inches, 113 square inches, you get
01:083.1 grams per square inch.
01:13So now let's say I decide I want to make an 18 inch pizza.
01:17How much dough do I need?
01:18You don't need to just guess.
01:19You can say, well, that pizza is 18 inches in diameter, which means the radius is nine
01:25inches.
01:26Nine squared times pi is 254 square inches.
01:31Now I multiply that number by my grams per square inch, 3.1, 254 square inches by 3.1
01:40grams per square inch says that a 788 gram dough ball will make the same proportion pizza
01:47at 18 inches as a 355 gram dough ball will make at 12 inches.
01:52I know what you're thinking.
01:54You're saying, Scott, but I want to make a square pizza.
01:57Well, I got good news.
01:58The math's even easier.
01:59You take your square pan.
02:01It's 12 inches by 16.
02:02Good news.
02:03Length times width, 12 by 16 gives you your surface area of the square pan.
02:09You multiply that by whatever your grams per square inch is.
02:12And that's how big your dough ball should be.
02:14And if you don't like 3.1 grams per square inch for a New York style pizza, you can change
02:19it.
02:20Try it at 2.5 grams per square inch.
02:23Try it at four grams per square inch.
02:25Either way, you'll find the truth for yourself and your own destiny.
