00:00As a person who travels a lot and I'm totally based out of New York City, one thing which
00:18I absolutely love and crave about Indian food is the culture of it.
00:25The cuisine has such a deep history, rituals, customs and food is an essential part of it.
00:33For me, Indian food is not just food, for me it's the culture of the country.
00:42My next project is a work of 12 years of labour of love, passion, devotion.
00:48It's called Utsav, it's one of the largest cookbooks in the world, 1200 pages, binds
00:54the whole of India together.
00:56So when people talk about a book, a book is paper bound inside a cover, I say that Utsav
01:03is bound with love.
01:05It's research on festivals of India, their traditions and most importantly, what makes
01:12India.
01:13The history of the country is so deep and it's beautiful in its own way, it's humble,
01:18it's pride, Utsav has everything.
01:24For me, that's just simple lentils and rice, I can eat that every single day of my life.
