00:00Hi, I'm Sandra from the Philippig Bistro in Cleveland. We're located on Victoria Road
00:10West in the centre of Cleveland and we're hoping to bring some great food and music
00:15and some nice wines to the town.
00:21What was the initial inspiration behind setting up the Philippig?
00:26So I did do live events for 12 months, so we've done pop-up events selling pulled pork
00:32barm cakes and an amazing homemade BBQ sauce and something very popular with the Philippiglets,
00:40pigs in blankets. And that took off really well and it was very good feedback from that
00:46and after I'd had a taste of doing that I really wanted to do something with food full
00:49time. So I viewed this property in November last year and just knuckled down with a friend
00:57who lives in Australia to work on a business plan remotely and we put the business plan
01:02together and yeah it all looked really positive. My family and friends have been amazing, they've
01:07all pulled together. We've had some great workmen here working out of hours to get it
01:12up and running and try and get it open before Christmas and yeah we managed to open Saturday
01:17so that was fantastic. How did the first weekend go? Saturday was great, we were very very busy
01:25in the back and then Sunday was a little bit quieter but it was only a soft launch. Hopefully
01:31this week we'll have live music on Friday and we'll have a different sort of menu. Saturday
01:37will be a similar menu to what we've had this weekend and then Sunday we're hoping to do some
01:41really lovely Sunday roasts, we'll do some really lovely Sunday roasts on Sunday. And then the
01:46weekend after is similar, Friday, Saturday and Sunday and then January and February we're going
01:52to be doing just Saturdays and Sundays. Right okay, can you tell me a little bit about why you think
01:58here on Victoria Street in Cleveland this is a good place to start the business? Yeah well we've
02:04got some great bars just over the tram tracks, we've got the Shipwreck, Corkscrew, Decades,
02:09Glasshouse, some great little bars over there but now at this side of the tram tracks since
02:14backstage has opened up that's gone from from being amazing to even better, bigger and better,
02:20they've extended. We've got The Vault just around the corner which is a fabulous night so I just
02:27thought somewhere in between is absolutely perfect for great food on a night out and it's just
02:33reinvigorating the high street really. There's a lot of empty shops so hopefully if we bring
02:38more people to the area those shops will fill up and we can create a bit of a hub in Cleveland,
02:44Cleveland is the place to be. So can you tell me a little bit about the menu? Yeah so when we've
02:50got gigs on we're going to have a slightly different menu so we'll have wings and sharing
02:54platters and things like that but when we're just with background music and it's a slower day and
03:01sort of slowing the pace down a little bit we'll have nice all freshly cooked food, roasts, a
03:06lovely vegetarian option and then on a Sunday we're going to try and stick to just a Sunday
03:11roast and bring some nice Sunday roasts to Cleveland. So you're going to be opening a little bit more over Christmas?
03:26Yeah so this weekend and next weekend which is the weekend between Christmas and New Year
03:35we'll be open Friday nights and Saturdays into the night and Sunday lunches but then January
03:41and February is going to be the quiet time so just going to focus on Saturdays and Sundays.
03:50What's the reaction been so far? Oh so positive yeah so positive so everybody's been intrigued
03:56we've had Winderlene on the window so everybody intrigued and poking sort of trying to poke
04:00through and peek through to see what's going on in here and once we've unveiled sort of what's
04:04happening people that they absolutely love the decor the vibe of the place and so having some
04:08nice little jazz music playing quietly in the background's been been a nice addition to it
04:14and we've got disabled access as well toilets so I was quite keen on that I've worked on some
04:19projects with supporting disabled so that's been quite a passion of mine to have been able to
04:25have nice toilets for disabled customers so we've got yeah so I was just going to say how
04:32wonderful the community's been everybody's welcomed all the the local businesses have
04:35welcomed us at High Street and Scroban it's been phenomenal and I'm on social media as well we're
04:41getting messages off other businesses so it's been it's just been so nice it's been lovely
04:45and people just putting head around the door and see how we're getting on and having a nosy round
04:49so I can't wait for them people to come back and see yeah the finished the finished product yeah.
