Here's how to make pizza sauce by the head chef from Franco Manca.

00:00Hello guys my name is Rafa, I'm the head chef for Franco Manca and today I'm
00:03going to show you guys how we make our tomato sauce.
00:08Okay guys, our tomato recipe is quite simple.
00:12We use those tomatoes which are quite sweet in flavor.
00:16They have this sweetness because of the soil and the
00:19weather or where they come from. They come from the
00:22Campania area under the Mount Vesuvius in Naples, Italy.
00:26Now I'm going to show you how we prepare these tomatoes at Franco Manca.
00:29All you're gonna do, you're gonna get a tin opener, open it through,
00:33put it in a bowl. You add a little bit of salt, around 20
00:39grams.
00:44And then using a potato masher, you're just gonna
00:48mash it until it becomes a sauce. Don't worry if you have some bits
00:53in the middle of the tomato because that's what you want. You don't want to
00:55be like a plain like smoothie sauce. You want to
00:58have some of the bits into it so you can see that they are
01:01actually real tomatoes in here. The reason why we don't cook those
01:06tomatoes is because we want people to actually feel the flavor of it.
01:09If you cook them they're going to become quite heavy after in the pizza
01:12so you want to feel the freshness and the lightness of the tomato
01:15when you have your pizza as well. Now that the tomato is quite smooth and you
01:18have just small bits into it, I'm gonna put the tomato sauce on the
01:21side and I'll quickly open a pizza base and show you guys how to put the
01:25tomato on the base of the pizza.
01:32With the ladle, I'm gonna take a full ladle of tomato,
01:37place it all in the middle of the pizza, then from the middle
01:40you're gonna spread it around leaving a bit of room on the edges
01:44like a finger. Then from here you can add anything like mozzarella,
01:47hams, chorizos, whatever and use it with your new perfect tomato sauce.
