Nothing says fall has arrived quite like a freshly baked apple pie. In this video, Nicole shows you how to make three decadent apple pie recipes; a classic apple pie, the easiest apple pie, and a caramel apple crisp pie!

00:00Nothing says fall more than apple pie.
00:03I'm gonna show you apple pie three ways,
00:06from the most classic way, to the easiest way,
00:09to something super fun and special.
00:11Here's what I want you to remember for this whole video.
00:13If I can do it, you can do it.
00:15I'm not a baker, but this is something I can do.
00:18Therefore, you can too.
00:20Okay, I'm starting out with butter flaky crust.
00:22So I'm starting with one and a quarter cup of flour.
00:26We all know how to spoon in our flour.
00:28To that, I'm going in with a quarter teaspoon of salt.
00:31The best way I know to add butter, to cut your butter in,
00:34is to grate it in.
00:35Use a box grater.
00:36And I also keep my butter in the freezer
00:38so that it grates really easily
00:39and it stays really cold the whole time.
00:41So I like to grate it in and then give it a little stir,
00:44grate it in, stir, and then it still stays separated
00:47in there and you're still gonna get your flaky layers.
00:50And now we simply just add cold water a little bit
00:52at a time until it forms a dough.
00:54Everything has to be cold so that when it bakes,
00:56it all kinda happens at the same time together
00:59and that's what helps create those layers.
01:02Just gonna finish it on the board.
01:05You just wanna form it into a dough
01:06and then shape it into a disc.
01:08All right, so once you have your dough formed into a disc,
01:10then we're just gonna wrap it in plastic.
01:12If you wanna chill it for at least like four hours,
01:15this is something you could also do the day before.
01:18Now, you're gonna need two of these.
01:20You're gonna need to double the recipe and make two discs
01:23because we're gonna do a bottom crust and a top crust.
01:27But I already did a little work ahead of time.
01:29And by me, I mean Julia.
01:33All right, then once you've got your dough all chilled,
01:36you're gonna roll it out to a little bit larger
01:38than your pie plate.
01:39And see, you can see the flecks of butter in there.
01:42That's a good thing.
01:46All right, doesn't have to be perfect
01:47because we're gonna make a topping
01:48and it's all gonna connect.
01:49So I'm gonna keep this refrigerated or in the freezer
01:53while we prepare our filling.
01:57For the apples, I'm doing a classic combo of.
02:03Like I was saying, for the apples,
02:06I love a combination of Granny Smith
02:08and either Fuji or Gala or Honeycrisp.
02:12You can do whatever you want.
02:13So I'm going to peel them.
02:15I might purposely leave a little bit of the peel on
02:18just for that kind of rustic,
02:20I made this, did not get it out of a can feel.
02:24So I just cut it off the core
02:26and then I make little slices.
02:32While this pie is the old fashioned classic way,
02:34this is also an easy way.
02:37I mean, there's nothing really complicated about it.
02:42To this, I'm adding in two tablespoons of flour.
02:45It is going to help thicken and absorb the juices
02:47as they leach out.
02:49And this way, we're not gonna get
02:50like a super watery apple pie.
02:53A teaspoon of cinnamon, because duh, apple pie.
02:57And then just a little bit of nutmeg,
02:59just like about an eighth of a teaspoon.
03:01And then a little bit of salt to balance out all the sweet
03:04and then give that a good toss.
03:06So while you can make an apple pie with canned apples,
03:09that really wasn't hard.
03:11Now, this goes into our pie crust.
03:17It's nice and chilled.
03:18Okay, so we're just gonna dump this
03:19straight into our pie.
03:21Oh, it smells so good.
03:23That's it.
03:24Now, time for the top crust.
03:25Okay, I went ahead and rolled out
03:27the second buttery pie crust.
03:30I'm gonna roll it out a little more.
03:31And because this is our old fashioned apple pie to me,
03:34what is iconic in an old fashioned apple pie
03:38is that lattice crust.
03:40And it's one of those things that looks
03:43like you went all out, but it's really not that hard.
03:47All right, and then I'm gonna cut down
03:49like one inch strips of the dough.
03:51It helps if you dip your knife in the flour.
03:58Before it goes on, I forgot,
03:59you got to dot some butter just kind of on top of the apples
04:04just so it kind of gets all melty and good in there
04:07when it goes to bake.
04:08Okay, now this is where it requires
04:10just a little bit of thought.
04:11Start by laying out your strips all in one direction.
04:14So I'm gonna do all of my like vertical stripes.
04:17And then you want to leave, you know, space them out evenly.
04:21Okay, and now fold every other one about halfway back.
04:25Lay a strip across and then fold them back over.
04:30And then every other other one.
04:34And then back to those first ones that we did.
04:37Okay, then you go to the top side
04:40and every other one, fold it back.
04:44Flop them over.
04:47And then those other every other ones.
04:55She fancy, she fancy.
04:57Okay, now we are going to trim off the excess
05:01and then try to connect the top dough to the bottom dough
05:05just by pressing down just a little bit along the sides.
05:09Okay, now here's how it starts.
05:10We're going in at 425, which is pretty hot,
05:13but only for like 10 minutes.
05:14Then we crank it down to 300
05:17and that's gonna help the inside cook
05:19at the same time as the outside.
05:20So whole thing's gonna take about an hour.
05:26Next up, the easiest apple pie.
05:29Don't blink for this one
05:30because it doesn't get any easier than this right here.
05:34So I'm just gonna start by slicing up some apples.
05:37You can use whatever variety you like.
05:39Going with the Fuji's here.
05:42Just been keeping them in some water
05:44so they don't turn brown.
05:47What's your favorite kind of apple?
05:48I go between the top three, Fuji's, Gala's and Honeycrisp.
05:54These are hitting today though.
05:56All you do is get a bowl and I'm going to mix together
06:00about three quarter cup of regular granulated sugar
06:04and then a teaspoon of cinnamon.
06:07Give that a mixy mix.
06:09And then you just layer this between the apples
06:12in your pie crust.
06:12Now for this, I'm using store bought
06:17pie crust because I promised easy, I'm gonna deliver easy.
06:21I'm going in with just a little sugar
06:22on the bottom for insurance.
06:24And then you just layer in your apples
06:26with your sugar mixture.
06:31We're gonna rank all these at the end, you know.
06:33I'm gonna have to rank all these at the end to see
06:35and I'm gonna take into account ease with taste.
06:40Like the other one, we're gonna dot up some butter
06:43and put it on top.
06:46And then our top crust.
06:48We're not gonna make any kind of fancy design here.
06:52Ain't nobody got time for that when we call it easy.
06:55This is already probably the right size.
06:57I'm just gonna roll it out just slightly.
07:00And for this one, I'm just using a nine inch pie plate,
07:03not a deep dish, just a regular, regular roll, regular roll.
07:07And then you're gonna kind of fold the top
07:09over the bottom a little bit,
07:11just to kind of connect the two crusts.
07:14And the two become one.
07:16Once you've kind of connected them,
07:19we're gonna give it a little zhuzh, you know,
07:22a little crimp.
07:24Set your hand across it and then you just go bloop,
07:27bloop, bloop.
07:30That's pretty good.
07:31Okay, now what you have to do is you have to create,
07:34since we didn't do a lattice crust
07:36that allows for ventilation,
07:37we have to create our own ventilation.
07:39So I'm just gonna make the little slits.
07:42Again, kind of an iconic look to the apple pie.
07:45All right, this one bakes similar to the first one.
07:48So we're starting at a really high temperature
07:50just to kind of set that crust and then reducing it.
07:52So I'm going in at 450 for about 10 minutes,
07:55then lowering it to 350 for about 30 minutes.
07:59Third one.
08:01I'm pulling it out, the canned pie filling,
08:03because there's something for everybody here, okay?
08:07Some of you may not wanna deal with peeling
08:08and chopping apples.
08:10I got you, boo.
08:11This one is the fun apple pie.
08:14This is the one that just, it's a little something special.
08:17It's like your fun cousin, you know?
08:19Because one of my favorite things in the whole wide world
08:21is like a cobbler slash crisp
08:25with some cold ice cream on top.
08:27And I love pie crust, so this one has both.
08:30Starting with a store-bought pie crust.
08:34And this one's a combination of just like,
08:36looks homemade, but is cheater, cheater.
08:40Okay, so into the crust.
08:41Two cans of apple pie filling.
08:44If you wanna zhuzh this up, make it your own.
08:46You can add in some additional spices
08:49or you can cook off a couple apples and stir it in.
08:52I promise, easy as part of this, so I will deliver.
08:58The caramel.
09:00Really, you can use whatever caramel you want.
09:01I just love a salted caramel,
09:03so I'm gonna just top the apples with a layer of caramel.
09:09Mm-hmm, this might be the best one.
09:11All right, now I'm gonna make the crumbly topping.
09:14This is one of those pies that you can say
09:15is like for breakfast.
09:17It's my kind of pie.
09:18You go in with flour, some rolled oats, brown sugar,
09:22some cinnamon, a little bit of salt,
09:25and you stir that together.
09:28Okay, and then I'm going in with cold cubed butter here.
09:31You could also grate it in,
09:32but I'm gonna work this butter in a little bit.
09:35This one doesn't have to stay cold.
09:37I just like to become one with the crumble here.
09:40And I just like to work it with my hands
09:41till it gets like super crumbly.
09:44This is what I'm looking for.
09:45Super crumbly little pieces and all those little clumps.
09:49All this is like buttery, sugary goodness.
09:53All right, so when it looks like this,
09:54we're dumping it on top.
09:56This is where cobbler meets crumble
09:58meets apple pie all in one.
10:00Yeah.
10:01I'm about to get back to you on cook times.
10:05This is trial and error.
10:07Okay, it's about time to start tasting.
10:09Pie one's out.
10:11I call that GBD, golden brown and delicious.
10:16Pie two.
10:18Can you see it piping?
10:20This one might be my favorite.
10:23Look at that.
10:24That is pretty.
10:26Here goes nothing.
10:28First taste of apple pie season.
10:31Let's take a moment to look at that thick crust.
10:35The crust to apple to sauce ratio is on point here.
10:39I'm gonna show you the most perfect bite.
10:41Look at that, juicy.
10:45If you can really think about
10:47what the most perfect apple pie is supposed to taste like,
10:50this is that, and I'm not even kidding.
10:52That crust, going in with the real butter
10:54just makes a difference in the flavor.
10:5610 out of 10, but I need to stop
10:57because I got two more to go.
10:59Mm.
11:02Look at that little sweetness right there.
11:06Now this one may not be as pretty
11:08because this is our easy version.
11:10You know, you sacrifice a little bit
11:12when you go straight for ease,
11:15but if you're craving an apple pie
11:17and you want something quick and easy, this one is that.
11:20So this one comes across like a little bit sweeter
11:23than the old fashioned
11:24because I didn't add the tart green apples with it.
11:27This one tastes like country fried apples, you know,
11:31the ones that you just sauteed
11:32and served as a side dish in the cafeteria,
11:35but I don't mean that in a bad way because I love those.
11:37It's like you put those inside of a pie crust.
11:40That's what the easy apple pie is.
11:43Not mad at it at all.
11:44When you think crisp and cobbler, it's not perfection.
11:47We're not looking for that perfect pie slice.
11:50This one is just better with ice cream
11:52and a little more caramel.
11:54Mm-hmm.
11:56So many perfect bites.
12:00Hot, cold, creamy, crunchy,
12:03a little bit salty, super sweet.
12:06So dang good.
12:07You can tell a little bit of a difference
12:09between the canned apples and the other two pies
12:11where I had the fresh apples.
12:12So if you're willing to go the extra mile
12:15and make the apples for this one,
12:17then for sure this one is the over the top version,
12:20but the ease factor plus the deliciousness
12:23makes this a winner.
12:24I mean, they're all winners though in their own right.
