These lemon garlic butter chicken spiedini are air-fried crispy, golden breaded chicken skewers with a light lemon garlic butter drizzle.

00:00Chicken spadini is an Italian classic you've never had,
00:03or at least I haven't,
00:03but now it'll be on my menu for the rest of my life.
00:05I'm gonna start with the marinade.
00:07I'm mixing together olive oil with white wine,
00:09the juice and zest of a lemon, some garlic cloves,
00:11a little salt, pepper, crushed red pepper, and oregano.
00:14Then I'm gonna cube up my chicken.
00:16I'm using boneless, skinless chicken thighs
00:17because that's what's best.
00:18Cover and marinate 30 minutes to an hour.
00:21After your chicken's marinated,
00:22toss it in a mixture of Italian seasoned breadcrumbs,
00:25regular panko breadcrumbs and Parmesan cheese,
00:27a little salt, pepper, and garlic powder.
00:30I'm gonna like pre-soak some skewers,
00:33and then you're gonna thread your chicken right on top.
00:35Give the skewers a light oil spray,
00:37and then into the air fryer they go
00:39at 390 for about 12 minutes, flipping them halfway through.
00:42You just melt some butter with garlic in the microwave,
00:44and then stir in lemon juice, parsley, salt, and pepper.
00:48Drizzle these over the skewers, and there you have it.
00:52I give these a 25 out of 10,
00:54and if this is not the next thing you make for dinner,
00:56you're crazy.
