How to Make 3 Cheap and Easy One Pan Chicken Dinner Recipes

When it comes to making an easy weeknight meal, nothing beats a one-pan recipe. In this video, Nicole shows you how to make three delicious (and cheap) one-pan chicken dinner recipes to add to your weekly cooking routine, including a parmesan garlic lemon chicken with potatoes and green beans, spicy soy noodles with chicken, and crispy chicken thighs with rice.

00:02So saucy.
00:04That is a beautiful dinner.
00:06God, that is good.
00:07Get ready to take notes,
00:08because it can't get any easier
00:10than what I'm about to show you.
00:11I've got three cheap and easy one pan chicken dinners.
00:17Self explain, self explanatory.
00:20I'm starting with probably the easiest.
00:23This is a dump and go kind of dinner.
00:25I've got one pan Parmesan garlic lemon chicken.
00:30If your mouth isn't watering already.
00:33I'm gonna start with my lemon garlic marinade.
00:35This is going to serve multiple purposes
00:37throughout the dish.
00:38The zest of the lemon is where it gets the best flavor.
00:42So I'm going to juice the lemon.
00:45Some olive oil.
00:46In goes the garlic.
00:49Onion powder.
00:50Okay, and then I need some oregano.
00:52Shall we?
00:55Okay.
00:59Thief.
01:00I'm like a thief in the night.
01:02In with about a half a teaspoon of oregano.
01:05And then salt and pepper.
01:06And then whisk it up.
01:07This right here is the superstar of the recipe.
01:09So we're gonna build everything just in this dish.
01:12I'm gonna do potatoes.
01:13I'm using just Yukon gold potatoes.
01:16Okay, then I'm going to add in half of this marinade.
01:19I'm gonna give them just a little more sprinkle of salt.
01:21All right, and then this goes into the oven 425 degrees
01:25while you get everything else ready.
01:26Only other ingredients we have.
01:30Some green beans, or whatever green vegetable
01:32you want to add.
01:33I got the microwave in a bag,
01:35so that's what I'm gonna do.
01:37And then for the chicken,
01:38I'm using boneless, skinless chicken breast.
01:41You could use chicken cutlets.
01:44See, green beans are cooked.
01:46This will kind of help them get
01:47a little bit of a prettier color.
01:49Okay, now, whenever your chicken is ready,
01:51just toss it in the remaining marinade.
01:53It's just gonna give it another little layer of flavor.
01:56Just toss it around.
01:57And then this can be marinating while your potatoes cook.
02:00Okay, it has been about 25 minutes.
02:05Our potatoes are cooking.
02:06The flavor is developing on the bottom of the pan.
02:10Gonna give it a little stir.
02:12Oh, it already smells so good.
02:14I'm gonna toss the green beans right in with the potatoes.
02:18I'm gonna take a little bit of butter
02:19and dot it over these veggies.
02:21This is just gonna add more flavor.
02:23Then, just lay your chicken right on top.
02:25I'm gonna, I'm gonna just trust the process.
02:29I wouldn't steer you wrong.
02:31So now I'm gonna take this reserved marinade that's in here.
02:35I'm gonna add in another tablespoon of softened butter.
02:39So I'm gonna go in with a little bit of mayonnaise
02:42and then take some grated cheese, put it right on,
02:46and then just mix it all together.
02:47Okay, then I'm just gonna spread this
02:49right on top of each piece of chicken.
02:51This is gonna bake up and form
02:52just like a cheesy crust on there,
02:55but that's also still really creamy.
02:57So this goes back into our already preheated 425 degree oven
03:01for just about 15 to 20 minutes until that chicken's cooked.
03:05That's it, dinner's done.
03:06You know that was easy.
03:08Okay.
03:10Look at this, look at this.
03:12That is a beautiful dinner.
03:14Super easy, one pan, and less than 15 bucks.
03:20I'm just gonna dress it up with a little bit of parsley
03:23because that's what I do.
03:24You can decorate, if you wanna make this fancy for company,
03:28some lemon slices.
03:30That is pretty.
03:31You gotta admit, it looks harder than it was to make.
03:34What I'm looking for is, of course,
03:37great flavor, tender, creamy potatoes.
03:41I also wanna make sure that chicken is cooked perfectly
03:45and not dried out and tough.
03:50Mm.
03:51Everything I said in the title is right there.
03:54You get everything.
03:55You get the garlic, you get the Parmesan,
03:57and you get the lemon.
03:59God, that is good.
04:00The potatoes get so creamy inside,
04:03and they have soaked up that lemon and garlic.
04:06Mm.
04:08This is one of those meals everyone will love in your family
04:11but it's also nice enough that you can entertain with it.
04:14It's also good just to have this as a technique
04:16so you can change out the vegetables,
04:18you can change out the topping,
04:20but just knowing how to make a one-pan meal like this
04:22will save you on those busy nights.
04:26This next one is kind of mind-blowing.
04:29It's so easy that it comes together in one pot
04:31with the flavor in this dish.
04:33So good.
04:34This I'm calling one-pan spicy soy noodles with chicken.
04:39So Asian flair here.
04:40Really, you can make it as spicy or not spicy as you want.
04:43Okay, so I'm gonna just cut my chicken
04:46in bite-size pieces.
04:49Okay, that's about the extent of your prep work.
04:54So I'm just gonna season this simply with salt and pepper,
04:56a little paprika, a little garlic powder.
04:58Just enough on the surface
05:00to help kind of create a little crust.
05:01Everything else happens in the skillet.
05:04You don't have to pre-cook your noodles or anything for this
05:07it all comes together in this skillet.
05:09So I'm gonna get that pretty hot,
05:10and then I'm just gonna add in a tablespoon of neutral oil.
05:13You wanna get it really hot
05:15because our goal here in this step
05:17is to create a crust on the chicken,
05:19but that's also building your first layer of flavor.
05:23Okay, space it out.
05:23You want it in one layer, and then walk away.
05:27Just don't touch it for a minute.
05:31Oh, I forgot to, I gotta chop my garlic and ginger.
05:34I knew I was forgetting something.
05:36Garlic is something I always have on hand.
05:38Ginger, I a lot of times have on hand.
05:41So just chop up our ginger and our garlic.
05:44Okay, back to our chicken.
05:46And we give it a stir.
05:47Look at all that color, it's developing.
05:49Just gonna pull the chicken out and set it aside.
05:52All right, to that I'm going in with a little more oil
05:54and some sesame oil.
05:56This is something I always keep on hand.
05:58So this is really gonna elevate this dish.
06:01And we're gonna infuse that oil with our ginger and garlic
06:05along with our crushed red pepper.
06:07This is where the spicy kick comes in.
06:11All right, and then the noodle.
06:12So you can use whatever dry pasta you like.
06:14And before you say anything, I'm about to break this pasta
06:18because it just fits in the pan better.
06:22Rebel.
06:23So yeah, you're not allowed to comment.
06:25You can tell that there's a bunch of flavor
06:27on the bottom of that pan.
06:29And it's time to get that out.
06:31So I've got one and a half cups of water.
06:33To that I'm gonna add in some soy sauce.
06:36Couple tablespoons of apple cider vinegar.
06:38This adds tanginess and a little bit of a sweetness.
06:43As this cooks down, the liquid is going to absorb
06:45in the noodle, making it soft,
06:47while also infusing the noodle with all that flavor.
06:50Okay, about five minutes.
06:51This is what you're looking at.
06:53Depending on how high your heat is
06:55or what size pot you use,
06:56some of that water may evaporate out faster.
06:59Add in more water as needed.
07:01And at this point, I'm gonna go in with my chicken
07:03that's just cooked about halfway.
07:05And then it's gonna all finish cooking together.
07:07I like to add this in when I add the chicken
07:09so that not too much sweetness absorbs into the noodles.
07:13I'm gonna add a little brown sugar.
07:15I mean, that basically is the dinner.
07:17Let's dish it up.
07:19It's just so good.
07:19You can serve it straight out of here.
07:22It is done.
07:22You know I like something green,
07:24so I'm going in with some green onions.
07:26Okay, look how good that looks.
07:30So saucy.
07:32Look at that.
07:33Ooh, it's hearty because there's a lot
07:36of chicken pieces in there.
07:38A little more green onion.
07:42And if you're feeling a little extra, it's so good.
07:46I forgot to put my side dish on there.
07:48And why not?
07:49Just to remind people, let it spicy.
07:51That looks delicious.
07:52It's like a takeout meal that you can make at home
07:55in less time than it takes to order it
07:58and have them deliver it.
07:59Oh, my mouth is watering.
08:00Give me some chicken and then, mm-hmm.
08:04Mm, y'all, this is salty, it's spicy.
08:10It's a hint of tangy and sweet also.
08:13So satisfying, so like addicting.
08:16This is one of those things
08:17like you're not gonna be able to quit eating.
08:20As the noodles cook in the sauce,
08:22the sauce gets creamy thanks to the starch from the pasta,
08:25but also each noodle gets slathered in the sauce.
08:29I mean, it's a winner winner chicken dinner.
08:33I'm ending on a tried and true recipe.
08:36This is one of my greatest hits on my personal page.
08:41The people love it.
08:42One pan, crispy chicken thighs and rice.
08:46This recipe could not be easier.
08:48You're getting crispy chicken.
08:49You're cooking it with the rice.
08:51So all the flavor of the chicken flavors the rice.
08:54It's super savory.
08:55It's just easy.
08:56It's just a good one to keep in the back pocket.
08:59So I'm gonna start by just chopping up
09:00a little bit of onion.
09:01This just adds flavor and that's the prep for this dish.
09:04Okay, this is one that comes together
09:06that you can be ready for in five minutes.
09:09Let's get cooking.
09:10You wanna heat up a large oven proof skillet.
09:14Get your pan hot.
09:15The key to a delicious piece of chicken is the crispy crust.
09:21All right, then you just take your skin on,
09:24bone in chicken thighs.
09:26Season your chicken liberally with salt and pepper.
09:28And then into the skillet it goes.
09:30Keep your heat nice and high and then just leave it alone.
09:35Don't touch, don't touch it.
09:37You're not gonna touch this for at least five minutes.
09:40All we're trying to achieve is really crispy brown crust
09:43and it will let you know when it's time to flip.
09:45It should easily flip over.
09:49That looks good.
09:51I'm gonna cook it for just about a minute on this side
09:54and then take them out of the pan.
09:55Skin is nice and crispy.
09:57That's what we're looking for.
09:58And then we have all these drippings in the bottom.
10:01That is plenty to coat our rice.
10:04I'm just gonna add in just a tiny bit of butter for flavor.
10:07And then in goes our onion.
10:10I'm gonna add a little salt
10:11and then in goes a little bit of garlic.
10:15And then our rice.
10:17So at this point you're making like a rice pilaf.
10:19So you wanna coat all the grains of rice with the fat.
10:23And because I used one and a half cups of rice,
10:26I'm gonna use three cups of liquid.
10:28So I like to use chicken stock here.
10:30Scrape up the rest of those bits.
10:32All right, and then I'm gonna put the chicken back in
10:36to cook with the rice.
10:37I don't want the chicken submerged in that liquid.
10:39We worked so hard to get that crispy skin.
10:45So let's not ruin it.
10:47Place the chicken, kind of nestle it in
10:49without getting the top.
10:51And also add back in any juices
10:53that accumulate in your plate.
10:56And now that's it.
10:57I mean, that's the extent of your hard work.
11:00Once it comes up, back up to a simmer,
11:02we're going to take this whole thing
11:03and place it in the oven to finish cooking.
11:06And you're gonna cook it until that liquid has absorbed
11:09and the rice is cooked.
11:13No babysitting required.
11:16Look at this perfection.
11:19This is the meal you make when you need some comfort.
11:23You know, it's like a warm hug from mom.
11:25This is that dish.
11:27I like to pretty it up a little bit with some parsley.
11:29This looks like the simplest, you know,
11:32not much going on here,
11:33but there's a whole lot going on here
11:35that's gonna make your people happy.
11:36I mean, this is just one that you need to have on deck
11:39at all times.
11:41All right, we want that crispy chicken
11:43and it's gonna be so tender.
11:49I can't explain it.
11:51I know you're probably like, big deal,
11:52it was like salt and pepper on a piece of chicken,
11:54but it's all about the way it's cooked, I'm telling you.
11:58This is a perfect example of simplicity at its finest,
12:02a $10 dinner that your family will devour.
12:06I need you to verify it for them.
12:08You, take a bite.
12:10Oh my God.
12:11I mean, it's just salt and pepper and chicken and rice.
12:14You don't think it's gonna be that good, but it's good.
12:16It's the simple things, folks.
