Never heard of a Crust Burger? That ends today. Nicole shares all the tips and tricks she learned at the Food & Wine Classic Charleston for this perfect sandwich, coined by the cooking wizard, Chef Sean Brock. We’ll take this over a regular smash burger any day!

00:00I had the privilege of trying Sean Brock's Crust Burger
00:02at the Food and Wine Classic,
00:03and I'm gonna tell you right now,
00:05it will change your life.
00:06Start by buttering a potato roll, place it down.
00:10You'll wanna do this on a heavy cast iron pan or a griddle.
00:13Smash the bun and toast it on both sides.
00:15Just put your meat into the pan,
00:17and I find it's easiest to use two spatulas
00:19to flatten it as flat as you can get it.
00:21Season it with salt and pepper,
00:23and then add your onions and your cheese.
00:24You wanna scrape up all that crusty goodness.
00:27The insides of the bun become the outside.
00:29Flip them over and place your burger on top.
00:31But we're not done yet.
00:32Goes into the pan one more time.
00:34The burger sauce, also very easy.
00:36He calls it fancy sauce.
00:37Just go in with mayonnaise, ketchup, hot sauce,
00:39and then a little fish sauce.
00:41Just trust the process.
00:42All those lacy, craggly edges,
00:44give it the name, crust burger.
00:46And you give it a dip.
