00:16a cornerstone of the local economy. Here we go behind the bar to meet the people who run
00:21our pubs and say why it's important for you to love your local.
00:24So I'm Louise and this is Rebecca and you are in Chandler's Bar in Chesterfield. I've
00:30worked here for, it's just coming up to ten years now, Rebecca's been here for over eleven
00:36and we have owned the bar since the first of July.
00:39Yeah, and what's it been like so far?
00:42It's been really good, yeah, we're enjoying it. It's been a lot to learn but, yeah, we
00:49love the job before and we love the pub so it's been really good to kind of get to terms
00:56with how it works and give it a go ourselves.
00:59So we are like a cocktail bar, that's what Roger and Sally started this pub as twenty-five
01:06years ago and we love that. It means you don't need to stick to the menu, we'll make anything
01:12and I think that's, you know, what we do really well. But we're also really focused on customer
01:17service and, like when we interview, we tell the people that the job is first and foremost
01:23customer service. That is the most important thing to us, giving a really good service
01:27and, you know, the drinks kind of come secondary to that and it's just about, yeah, it's the
01:34people that make it, I think, and the customers and just making sure that they have a great
01:39time and, you know, to us the job is to make sure somebody leaves the door happier than
01:44they walked in the door and whatever we need to do to do that, we will do it.
01:48How many staff you have?
01:49Six, we've done this.
01:51Six?
01:52We've got six.
01:53Six, there's only one other bartender. So there's me, Becca and Abi and we are currently
01:58training two more but we're a really small team, like super small.
02:02Yeah, it's like a family, isn't it?
02:03Yeah, absolutely.
02:05What kind of drinks do you serve as well as your cocktails?
02:10So, yeah, ales, wines, lagers, wheat beer. We can offer any cocktail as a vegan option
02:19and we've got gluten-free beers. We offer our whole cocktail menu as a mocktail menu
02:25as well, so like loads of non-alcoholic options, non-alcoholic beers, non-alcoholic gins.
02:31We try to just have something for everyone.
02:35What would be the most popular beer or cocktail?
02:38It's hard to say.
02:39Do you think Moretti?
02:41Moretti is probably the most popular beer, yeah.
02:45Cocktail-wise, it changes, yeah, on a day-to-day basis. We sell a lot of like
02:49espresso martinis and moretti with sours.
02:51Old-fashioned, all the like traditional kind of.
02:55Yeah.
02:56But what, I don't know.
02:58No, a lot of the menus are kind of either twists on classic or I'd say 80% of the menu
03:04are drinks that we've made the recipe for ourselves. They aren't recognised drinks
03:08that you can get anywhere, so that kind of sells well because it's stuff that people
03:12haven't seen before.
03:13Yeah, but a lot of the time people just say, oh make whatever you want and we do it, yeah.
03:20We've had a look around the rooms upstairs. Can you tell me a bit more about that?
03:27So yeah, we're hoping to get them open next month. We're just finalising a few things.
03:33Roger and Sally have done an amazing job renovating them and it's a new thing for us,
03:39isn't it? We've had to learn how to make beds and iron sheets and do things like that, but
03:45also at the end of the day it's just another kind of level of hospitality and it's just
03:50about making people feel welcome and comfortable. So yeah, we're quite excited about that.
03:55How many rooms do you have?
03:57We've got three guest rooms, all en suite, and they're all quite big. So yeah, they're
04:03done to a really high standard, so I think people will be really happy with them.
04:07Have you got any future plans?
04:12What is coming up?
04:13Oh, we've got the Christmas craft fair. We've got a Christmas craft fair on the 23rd of November.
04:21We've got a massive Halloween party coming up this Sunday. We go all out for Halloween,
04:25we absolutely love it. And then for us, it's just getting the rooms up and running. That's
04:30a huge thing for us to start dealing with, so that's kind of our primary focus. And then
04:36obviously there's Christmas and that. That takes care of itself generally.
