00:00This is my first time ever ordering Whataburger breakfast.

00:06Taking it back to do my research.

00:11If you know, you know, I've got the honey butter,
00:13yum, yum, yum, chicken biscuit from Whataburger.
00:17We're gonna try it, mm, and then we're gonna recreate it.
00:20I didn't know the craze about Whataburger
00:23or the honey butter chicken biscuit.
00:25Only available 11 p.m. to 11 a.m.,
00:28but I found it's most popular in the late night hours.
00:32So I had to go get one for myself, try it out.
00:35Mm, it is indeed all about the honey butter.
00:38It's sweet, yet creamy.
00:39You don't usually get like a buttery sauce
00:42that's that creamy, and it's the perfect sweetness
00:44to the salty chicken.
00:46The biscuit is very tender, but it's thin.
00:48It's not a huge flaky biscuit.
00:50The star of the show is the honey butter,
00:53so I'm for sure making that from scratch.
00:55I'm also gonna make some easy biscuits from scratch.
00:58The chicken, I'm gonna take a shortcut
01:00because everyone's here for the HP.
01:02So let's do it.
01:03Let's get started with the biscuit.
01:04The recipe I'm using for the biscuits
01:06is Chef John's Buttermilk Biscuits,
01:08and they make just the most perfect biscuit ever.
01:11So it just starts with all-purpose flour,
01:13two cups, two teaspoons of baking powder,
01:16and then a quarter teaspoon of baking soda,
01:19and a teaspoon of salt.
01:21Give that a little whisk.
01:23So now I'm gonna cut in the butter.
01:25A little trick I like.
01:28Is to freeze your butter.
01:29You know when a recipe calls to cut in the butter,
01:31you know, and you have to like knead it forever
01:34till it gets kind of crumbly?
01:35This is a shortcut that I love.
01:38Break out your box grater.
01:40See how much easier that is?
01:43And it's all crumbly.
01:45And now the buttermilk for the buttermilk biscuit.
01:48Oh my God, that just reminded me of the song,
01:51Buttermilk Biscuits, if you know, you know.
01:54And you would only know if you were jammin' to it
01:56back in the 90s.
01:59I barely know about that.
02:01Three quarter cup cold buttermilk.
02:03Leave it in the fridge until you're ready.
02:05Make a well into your flour mixture.
02:08Add in your buttermilk, and then you're gonna mix it
02:11just until combined.
02:13The way to get tender biscuits is to not overmix.
02:16We'll do the rest onto the work surface.
02:19So I'm just gonna add a tad bit more flour,
02:21and I'm gonna turn my dough out.
02:24Okay, so take your dough and pat it out
02:26into a rectangle shape, and then you take the rectangle
02:29and you fold it into thirds.
02:31Twist it, pat it out, do it again.
02:33Pat it, do it again, do it again.
02:34So you're supposed to just do that three times total.
02:38I'm gonna do it an extra time,
02:40just because it's gonna make it a little less tender,
02:41but a little more like Whataburgers.
02:43All right, since that was the last time,
02:44now I'm gonna roll it out to just about a half inch
02:48thickness, so I'm gonna go slightly thinner
02:51than what I normally would.
02:53I gotta find a biscuit cutter.
02:54Forgot to look for that.
02:57Biscuit cutters, uh-huh.
02:59Trying to decide what size, maybe this one.
03:02So we'll go kind of big.
03:03Now, what I did notice on the biscuit
03:06is that it kind of has that like toasty bottom.
03:09So to get that, I'm gonna heat up a little bit
03:11of shortening in whatever pan you use to bake your biscuits.
03:15Put that in the oven to kind of preheat the skillet,
03:18and that's gonna kind of crisp up that bottom a little bit.
03:20And now we will cut out the biscuits.
03:22Easy way to cut out the biscuit
03:23is to dip your cutter in flour,
03:26because we don't wanna flatten the edges too much.
03:29See, you want those layers to show through.
03:32This is gonna be a hit around the office.
03:34I'm gonna go ahead and make another batch of biscuits.
03:37Okay, just fill up the pan.
03:38Make enough biscuits to fill up the pan.
03:43All right, hot shortening,
03:44similar to how you would like cornbread
03:46to get that crispy bottom.
03:48Place my biscuits in.
03:49Now, you want your biscuits to touch, just barely.
03:52That way they grow up and not out.
03:55So that's why I made extra.
03:57Oh, can I do it?
03:59I'm gonna make it work.
04:00Now I'm gonna brush on just a little more buttermilk
04:02on the top, just to make them pretty.
04:06These go into the oven 425 for about 12 to 15 minutes,
04:10or just until they're GBD, as they say.
04:13All right, while the biscuits cook,
04:14we're gonna make that honey butter.
04:16This isn't just like regular honey butter,
04:18because this is more like a sauce.
04:20So I'm just grabbing a stick of butter,
04:22and I'm just gonna cut it into cubes.
04:24So we're gonna come to the stove.
04:25Gonna heat up about a half a cup of honey.
04:28And then it did have vinegar as an ingredient,
04:30and I have a little something that has vinegar,
04:35but also has flavor.
04:36Just like a couple little dashes of hot sauce.
04:39Then I'm also gonna add in just a pinch of salt.
04:42So just how you would a butter sauce.
04:45We're going to slowly whisk in our cold butter,
04:49and then just try to emulsify it a little bit.
04:51You can see it's starting to change colors.
04:53We're about there.
04:56Here, look at it.
04:57It's thick and creamy, buttery sweet.
05:00All that's left is the chicken,
05:01and we're taking a shortcut on that.
05:06Popcorn in the freezer, that's for another day.
05:08That's another story.
05:11Frozen, that's probably what they use
05:13at Whataburger anyway.
05:14So what they give you on the sandwich
05:16is just like one big chicken tender.
05:20That looks like it, but theirs is bigger.
05:23I'm gonna do the tenders.
05:25Even if I have to add more than one.
05:27Just gonna pop these in the air fryer.
05:28We're gonna go 360 for about 13 to 15 minutes.
05:33Biscuits are done, honey butter's done,
05:34and then we'll bring it together.
05:37Look at this, look at this.
05:38Look how perfect these are.
05:41Toasty, golden crisp on the outside,
05:44and on the bottom,
05:45but these are gonna be so tender on the inside.
05:48Look at that, look at that.
05:50This plus honey butter, we could be done.
05:52We're gonna cook that chicken,
05:53and then put it together.
05:54Voila, crispy chicken tenders.
05:57One just looks a little lonely,
05:59so Nicole's version, we're gonna have two.
06:02Cause see, that's the beauty of making your own at home.
06:06You can do whatever you want.
06:08So we're gonna do two,
06:09and then all I know is that that biscuit
06:12was sopping in honey butter.
