00:22a little bit extra frantic.
00:24But that doesn't mean, honestly, we
00:26don't want a quick show-stopping brunch
00:28to share with the family.
00:30So here's the challenge, my darling.
00:32I'd like to challenge you today to take a simple brunch dish
00:35and take it to the next level.
00:37Think out the box.
00:39Get really, really creative.
00:41Good luck.
00:41And I can't wait to see what you're going to cook up.

00:53your cooking to the next level.
00:55Today, Gordon has challenged me to whip up
00:57a dish that also happens to be one of my favorite weekend
01:01activities, brunch.
01:03But not just any brunch dish is going to impress Gordon.
01:06So I'm enlisting the help of Simply Orange
01:09to give pancakes a much-needed makeover.
01:12This amazing ricotta orange pancake recipe
01:15will be transformed by using orange juice inside
01:18of the batter.
01:19It's going to give it a robust flavor and more of a purpose
01:23than just in my mimosa.
01:25Plus, they're still simple enough
01:27to pull off that elevated brunch moment for your favorite brunch
01:30besties.
01:31This dish is going to be just a few simple steps.
01:35What I'm going to start with is the dry ingredients.
01:38And I like to sift them all together into one bowl.
01:41So I'm going to start with some simple flour right
01:46into my sieve or strainer here.
01:48I like to work over the bowl that I'm
01:50going to create my batter into.
01:53Next up, I'm going to add some sugar.
01:55This is a sort of fine milled sugar.
01:58Baking powder.
01:59Baking powder gives us that amazing aeration and puff
02:03in our pancakes.
02:05Baking soda.
02:06Adding baking soda is going to allow our pancakes to spread.
02:09That's an easy way to remember when to use what.
02:11Baking powder for puffing and baking soda to spread.
02:15What I like to do when I'm cooking sweet or sort
02:17of pastry dishes, I always add a pinch of salt.
02:21And that's going to sort of elevate
02:22the sweetness of your dish.
02:24So a pinch of salt. And we simply
02:27sift these dry ingredients together
02:29by just tapping on the side.
02:32So two things are happening.
02:33The aeration and the lightening up of these dried ingredients.
02:38And it's going to pull out any clumps or harder pieces that
02:42may have ended up into our dry ingredients.
02:45Also sort of mixes them together.
02:47And so whenever using flour for ingredients
02:51and you don't want to overwork the gluten,
02:53you always want to just mix your dry ingredients together
02:56before you add your liquid.
02:59So now that we have our dry ingredients sifted together,
03:01we're going to set this aside and mix together
03:04our wet ingredients.
03:06And that starts with cracking a few eggs.
03:08Four eggs.
03:12I always like to crack my eggs on a flat surface
03:14to make sure that no shell works its way
03:17into the mix.
03:25So the eggs are going to give us some of the protein
03:28structure in our pancakes.
03:30I'm going to add some beautiful ricotta cheese, which
03:33will add some sort of creaminess to our pancakes.
03:41I always like to add the zest of an orange.
03:44Gives a nice, beautiful, robust flavor.
03:47Sort of intensifies the flavor of the orange.
03:51It's a great way to use byproduct also.
03:53There's a beautiful sort of natural essential oils
03:55that come off of the orange zest that will echo
03:59the flavor of the orange juice.
04:04And now for the orange juice.
04:14Going to whisk these wet ingredients together.
04:18And what I love about this recipe is orange juice,
04:21it's normally just served on the side
04:23or in a mimosa in a glass.
04:25This really adds some beautiful sort
04:26of vitamins and nutrients inside the pancake batter.
04:32You really just want to incorporate everything
04:34together until it's smooth.
04:36Smells incredible.
04:39Breaking up those egg yolks.
04:41Getting a little bicep workout.
04:44And once those ingredients are combined,
04:46I'm going to add the wet to the dry and just whisk together.
04:57This is where you don't really want to overwork your batter.
05:00Just simply combine ingredients together.
05:08Perfect.
05:10So griddle's been heating.
05:11I love the flavor of butter with my pancakes.
05:14Really takes me back to my childhood.
05:16One of my favorite things growing up
05:17was Saturday morning pancakes.
05:20And I love the opportunity to sort of elevate
05:22and transform the simple, delicious orange
05:25into the pancake batter.
05:28And so take a simple stick of butter, rub onto the griddle.
05:33And what this is going to do is sort of offer up
05:35these little amazing bits of caramelized milk
05:38solids in the butter that give great color, great texture.
05:42And we're going to add that in our pancakes.
05:44What I'm looking for is for that butter
05:46to get a little bit foamy.
05:47You don't want your griddle too hot,
05:49but you also don't want it too cold.
05:51It's a really nice, happy medium.
05:54So pancakes, just sort of dropping the batter
05:56down in the center.
05:58And my grandma always used to say
05:59to look for the pancakes to cook around the edges, right?
06:03Because you'll start to see these little bubbles
06:05start to form.
06:07And they'll sort of start to brown around the outside.
06:11So now that our pancakes are cooking,
06:13we're going to make a delicious orange-flavored maple syrup.
06:17For this syrup, I actually take those beautiful oranges
06:19that we've zested, and we're actually going to use
06:22the inside of the orange.
06:24And how I do that is just sort of take the top
06:26and the bottom off and go around and peel that orange.
06:31And then you get these beautiful sort of segments.
06:40You can go in around that pith.
06:43Incredible.
06:45I mean, there's nothing better than a flavorful maple syrup.
06:48Don't skimp, get the good stuff.
06:50You want true maple syrup for this.
06:52So what I like to do is actually heat the maple syrup
06:55and add those delicious orange segments into the maple syrup.
07:01I know, mind-blowing.
07:04Again, we want to fortify the oranginess
07:08of this ricotta orange pancakes
07:11and sort of add in another layer of orange zest.
07:17Cinnamon pairs so beautifully with oranges.
07:22And so you can start to see the orange zest
07:23and the oranges, and so you can start to see
07:26this sort of caramelization around these pancakes.
07:29And they'll start to form little bubbles.
07:30This is like one of the first things
07:32that my grandma taught me when making pancakes.
07:36And so you want to give them a little bit of a flip,
07:38just gently.
07:40Oh, they smell absolutely incredible.
07:44Nutty brown butter, adding another layer of flavor.
07:48And so those will start to sort of continue to cook
07:50and fluff up on the other side.
07:53Our syrup is just starting to marry
07:55those delicious caramelized notes from the maple syrup,
07:58lovely cinnamon, and that fresh orange segments.
08:00Who doesn't love pancakes?
08:02I mean, you got to really set the vibe for brunch, right?
08:04You got music going, all your friends are over,
08:07tons of mimosas.
08:08You get the picture, right?
08:09So let's plate these babies.
08:13You can totally make a ton of these ahead
08:15and sort of pop them in the oven
08:16when you're ready to serve your friends.
08:18What I love is that simply orange
08:20inside of the pancake batter
08:22really plusses this up, right?
08:23It takes your pancakes to the next level,
08:26sort of echoing those flavors of the orange zest,
08:28the orange syrup.
08:32I don't know about you,
08:32but I definitely need a triple stack.
08:36Serve this delicious, fresh maple syrup.
08:42Oh, it smells absolutely incredible.
08:44Mm.
08:51Nice dollop of yogurt.
08:54The yogurt will add a little bit of richness.
08:59Have to finish this with a few fresh minced sprigs.
09:02And one more thing we cannot forget, always,
09:06some fresh orange juice.
09:07Mm.
09:15Pancakes are done, simply orange juice is poured.
