00:00So obviously this is our dish that we got at the restaurant on our five course menu for £45.
00:05It's a coconut pudding with sesame and a mango sorbet.
00:09So as you can see it's quite an understated dessert, all hidden underneath like a little surprise.
00:13That fresh mango sorbet, the nice beautiful smooth creamy coconut rice under there
00:18and then that crispy figatine as well just adding a nice crunch to the dish.
00:23This is our dessert on our five course menu for £45.
00:28I'm going to plate it up now, so we got a nice little coconut rice, nice little coconut pudding.
00:33That's going to go in the dish there.
00:36As you can see, nice little coconut rice in there.
00:40We're going to have some nice sesame praline.
00:45Just gives it that little nuttiness that we're looking for in the dish.
00:50Also got a little bit of toasted coconut as well, just to go with that rice.
00:56And then here we have some crispy figatine, which is basically a crispy pancake or a crispy crepe.
01:04So it gives it some nice texture to the dish.
01:08So as you can see it's quite hidden, so it's quite a minimal dish.
01:11So coconut pudding with sesame praline.
01:15And then we're going to finish the dish now with a little mango sorbet on top.
