00:00The 10 dishes that I focus on is to introduce the Indian traditional food, how it will be
00:07if incorporated with durian.
00:09And also we love to make mung bean porridge, we will add the durian flesh into it.
00:14You know, bring the Indian root, where I'm coming from, to stay in this durian cookbook.
00:20Most of the recipes that I did for the cookbook, it's desserts, mostly Nyonya-influenced recipes
00:27because for Peranakan or Nyonya dishes, we use a lot of durian in our cooking.
00:33Debbie Teo and Dave Murugiah, along with six other renowned chefs from the Masters of Malaysian
00:38Cuisine Coalition, share their durian-inspired recipes in a one-of-a-kind cookbook.
00:45The Durian Cookbook was launched last Sunday, featuring a total of 70 recipes that cooking
00:51enthusiasts in Malaysia and around the world will surely find intriguing.
00:56The cookbook also has a personal touch of all the chefs, providing insights into why
01:00they love durian and incorporate it into their cooking.
01:04Because I grew up in a very small town, like in Segamay, there are times when the season
01:10is about to end or the beginning of season, we will only get one or two, so we cannot
01:16eat just like that.
01:17The whole family is big those days, so they will make into desserts, especially like pengar.
01:23That's what I grew up eating.
01:25So I felt like that should be the first recipe that I'm sharing.
01:28When we do a cookbook, basically we want people to be curious about what is durian, how does
01:32it taste like, and we want them to come to the land of durian to experience it.
01:37Actually, this book was initially done to represent Malaysia on the world scene.
01:44And it's supposed to be in all Malaysian embassies around the world.
01:47China market, if they already love durian, it's more of the westerners, like the European
01:52market that we want to intrigue them.
01:55If they can't do the fresh one, they probably want to do desserts.
01:59The cookbook is presented by durian specialist D. King, with the sole objective to market
02:04durian and Malaysian flavours to the world.
02:07Our mission is to make everyone love durian, so we always find new ways to be more innovative.
02:14So I'm very glad that we have this bunch of chefs to come along to develop such a great
02:20recipe, and we create this durian cookbook.
02:22So especially to the westerners, so we can have more people to try durian in a different
02:26way.
02:27You know, they think that this food is so bizarre, so afraid to try.
02:30So with this cookbook, I hope that they can have a different perspective.
02:33And I believe this is Malaysia's first ever durian cookbook that comprises from the savoury
02:38to dessert to the spicy to the sweet.
