00:00Hello, we're Ballycosnahan Farm in Patrick and Jenny Sheppard and

00:06myself, Rodan Hayne. We farm roughly about 700 Lochtans and we just specialise in

00:12Lochtans and we've for the last 12 years we've sold our wool worldwide. 80% of our

00:22wool goes to America and we sell all our wool every year and the farm is diversified,

00:32as most farms now have to, so we've gone into charcuterie using a niche product which is a

00:40Manx Lochtan. So actually all these salamis, no one else makes salamis from Manx Lochtan.

00:48So we've won this year, it's our first outing and this year we won three stars for

00:57this Manx Lochtan Chorizo from the Great Taste Awards and we won two two-star awards as well.

01:05So we're very fortunate and very proud as a sort of our first outing that we were able to do this

01:12but we have our own butchery and we have our own curing building as well for all these salamis

01:19and we have Richard who is our charcutier so he butchers and he prepares everything and here we

01:28are, we package everything, we label everything, we design everything, we do the lot.
