00:13Spicy.
00:14Spicy mango pizza.
00:15So if you can see the spread of The Bus Cafe, it's rock and roll.
00:25Colorful, appetizing, the presentation is beautiful.
00:29But what I like most about what we have in front of us here is makikita mo yung effort
00:37nila in really celebrating yung local ingredients nila.
00:43Basically, this is the cassava recipe nila na ginagamit nila for their ice cream cone.
00:49And then, other application is pang deep fry nila, yun nga, pambalot nila dito sa Puto
00:53Maya, na share din sa atin nila ma'am Vicky at ma'am Melanina.
00:58Dito daw sa buhol kapag kumakain ka ng Puto Maya, talagang with mangoes.
01:02At ang kabilin-bilinan ni ma'am Melanie, i-dip daw natin yung ating Puto Maya sa sikwate.

01:21Grabe.
01:23Yung pait, yung fruity notes from the sikwate, nag-fiesta kasama ng timplan ng ginger natin
01:31sa loob ng Puto Maya.
01:32Tapos yung burst of sweetness from the mango, perfect.
01:39So we have here our fresh cassava lumpia and yung ating garden salad.
01:44We have yung ating peanut butter dip and yung ating honey mustard for the salad.
01:50Again, another application dun sa kanilang pinoproseso dito.
01:54Cassava wrapper, again, the one they're using for their ice cream cones, yung para sa ating
02:00Puto Maya.
02:01Ibang technique naman yung ginagamit nila dito wherein, parang rice paper yung application
02:06nila na dinidip sa warm water.
02:10Ah.
02:12Gusto ko yung heaviness ng peanut butter, tapos biglang may magkakatsoy yung tartness
02:26na hindi nakakaumay yung, kadalasan kasi kapag mga peanut butter base yung sauce nyo or
02:33yung pinakadip, tends to be too heavy on the palate eh.
02:36Pero ito because of that acidity, that's nagiging balance sya.
02:40Ito may magic tayo dito, so kapag tinabi mo yan, meron tayong surprise sa loob.
02:46So we have here pineapple, we have shredded carrots, tsaka ba mga edible flowers tayo
02:55sa loob.
02:56Sa plate pa lang na to, parang nakuha niya na kagad na makondision yung utak mo na they
03:02are trying to give you a farm to table experience eh.
03:06Very well balanced yung kanilang honey mustard, yung sweetness atsaka yung medyo angas from
03:14the mustard.
03:16Kuhang-kuha yung tamang balance.
03:18So meron tayo ditong kinampay at kamote.
03:24Sa amin sa Tagalog tawag namin dito latik bisaya.
03:28Ito kasi yung gata na may asukal, nan ginawang parang caramel.

03:44Pinaka-grain nung kinampay, parang sya naglalaro dun sa bibig mo.
03:50Kapag ako yung gumagawa ng latik na gantong version, more on matamis kasi yung nangyayari.
03:56Ito kasi more on the parang coconut jam na yung naging kinalabasan.
04:00So for me parang this works better, lalong-lalo na sa gantong dish.
04:08So ito naman, sa mga pinagmamalaka rin nila dito sa The Bus Cafe, yung kanilang spicy mango pizza.
04:14Sila rin mismo yung gumagawa ng kanilang hot sauce dito.
04:16Honeyed hot sauce.
04:18Okay.
04:22I love the dough.
04:24Mapapansin mo dun sa dough nila, different starches basically yung nandito.
04:28May kasawa daw ito.
04:30Kasi pagkagat mo, you'd notice yung bite na meron sya.
04:38It gives you a different texture dun sa pizza experience mo.
04:42Kasi that's not your usual experience or yung hindi yung madalas mong natitikmab.
04:48Tapos yung kanilang mango on top, nag-caramelize na rin.
04:54But yun nga, it's a bit spicy.
04:58So we also have here yung ating kasawa chips.
05:04Napaka-festive nang itsura.
05:06So ito yung kanilang biko-nok.
05:08Biko to, different layers, kaya mag-iba yung kulay kasi mag-ibang asukal yung gamit nila.
05:14White sugar dun sa white na nasa isang layer, brown naman dun sa mas darker.
05:18Lunok is yung kanilang desiccated coconut na tinosta pa nila.
05:28Perfect dish to end yung ating feast na nakalatag dito sa harap.
